Sour cherry lavender ice cream is a combo that is hard to forget. The combination of flavors is just absolutely amazing. I was never a big fan of lavender just because of the obvious fact that it tastes like soap, but just a tint with the sour cherries kind of works for me. The french is quite into lavender, especially in Provance. We went to visit a couple of years back, and the smell of lavender is just so intoxicating.

I wanted to make this recipe spectacular, but none the less the simple ingredients like cherries, coconut cream, cashews, and lavender is all you basically need to make this batch of ice cream pretty hard to forget.

The heat has calmed down a bit and the need for ice cream has slightly dulled a bit but not at all too much to not enjoy this ice cream. I mean who can ever say no to ice cream. My husband is probably the biggest ice cream fan I know (vegan ice cream does not do the trick, unfortunately, I am still trying to convert him), my son, on the other hand, he does not know the difference-haha so! and then more for me/us.

Ice cream is my husband’s favorite weather rain or shine. I am kind of where my mood takes me kind of girl. I like my favorites like baked puddings (the chewier the better), anything caramel, chocolate mousse and custard. But I like to be surprised, how about you? This ice cream is right up there. It’s certainly is for those who like something different. I have to say that I think this is perfect for those occasions where you need to bring something new to the table or you just need a break of the plain old vanilla.

The cherries just make this ice cream. If you can not find fresh cherries, be sure to buy whole cherries canned in water. Drain the liquid, de-seed them and make the cherry compote like the recipe. Lavender is also optional as you would know and can be subbed with other ingredients like cookie bits or chocolate chunks. And how amazing does that sound…I think that one would be one my husband will approve of!

Sour cherry lavender ice cream

Sour cherry lavender ice cream

Ingredients 

  • 200ml coconut cream
  • 400ml rice whip or you can use 200ml coconut cream and 200ml soaked cashews
  • 2-4 tbsp maple syrup
  • 1 tsp vanilla essence
  • 1/4 tsp salt

Sour cherry compote

  • 1 cup de-seeded cherries
  • 1 tbsp lemon juice
  • 2 tbsp honey
  • pinch of salt

Lavender sugar

  • 1/2 cup coconut sugar
  • 1 tbsp dried lavender
  • pinch of salt

Method

  1. Add the soaked cashews (soak overnight or soak for 3-4hrs), rice whip, vanilla, maple syrup and salt into a blender.
  2. Blend till smooth, whip up the coconut cream and fold this into the cashew mixture.
  3. For the cherry coulis: place all the ingredients in a saucepan on the stove on medium heat and then let it simmer for 10-15 minutes till glossy and gooey.
  4. Let the cherry coulis cool down before adding about half of this to the mixture.
  5. Scoop into a square plastic container and set in the refrigerator, mix every 30 minutes or so to break the ice crystals-this can take up to two hours to set.
  6. Add the rest of the cherries the last time you make the churn.
  7. Scoop up and serve with lavender coconut sugar.

Lavender sugar 

  1. Place the dried lavender and the coconut sugar in a blender and blend till the lavender is no longer visible and the sugar is soft like castor sugar.
  2. Store in a Maison jar for up to one month.

So any weekend plans? My sister is here for a visit, that means three kids in my house. Pretty busy, messy and exhausting. I’ll be taking it easy, that’s for sure.
