Salted chocolate oat bars

Salted chocolate oat bars

Ingredients 

  • Two cups rolled oats
  • 1/2 cup salted date caramel
  • 1/4 tsp salt
  • 50g cacao paste
  • 25g cacao butter

Salted date caramel

  • 6 Medjool dates
  • 1/2 cup peanut butter or almond butter
  • hot water to smooth it out
  • 1 tsp vanilla essence
  • 1/4-1/3 tsp salt

Method

  1. Place the oats in a bowl and add in the salted date caramel and the salt, mix well. 
  2. Press into a parchment paper-lined bread tin and flatten the oat bar batter 3cm in thickness and place it in the freezer to set. 
  3. Place the cacao paste in a bowl and place it either over a bowl with hot water or over a boiling pot on the stove while the cacao paste melts, add in the cacao butter, and let both melt. 
  4. Remove from the heat, leave until a bit thicker. 
  5. Add in a pinch of salt and pour the cacao mixture over the oat bars. 
  6. Add extra salt on top if you like, slice, and place in the fridge for up to one week & enjoy! 

Salted date caramel 

  1. Place the dates in hot water for thirty minutes to soak until soft.
  2. Add the de-pitted dates in a blender with the rest of the ingredients and blend until smooth.
  3. Add some hot water to smooth it out and place in a glass container in the fridge to cool.

Notes:

  • You can add in some of the date caramel into the chocolate paste if you like to sweeten it. 
  • You can replace the chocolate mixture with 90-99% dark chocolate or vegan chocolate
  • Shredded coconut can be added into the bars as well for some extra nuttiness.
