Salted caramel mousse pots

Ingredients 

  • 1 cup sweet potato cooked and mashed
  • 1/2 ripe avocado
  • 4-6 Medjool dates
  • 1/3 cup coconut milk or cream
  • 1 tsp vanilla extract
  • Pinch of salt

Salted caramel popcorn

  • Two cups popcorn
  • 1/4 cup vegan caramel 
  • 1/4 cup coconut sugar
  • 1 heaped tbsp peanut butter
  • 1/2 tsp salt (depending on how salty you like it)
  • Extra vegan caramel
  • Flakey salt

Method

  1. Place the cooled and mashed sweet potato, diced ripe avocado, dates, coconut milk or cream, vanilla, and salt in a high-speed blender. 
  2. Blend until smooth and scoop or pipe into the molds that you want to use, place in the fridge to cool. 
  3. For the salted popcorn, start by making the caramel. 
  4. Place the vegan caramel, coconut sugar, peanut butter, or almond butter in a saucepan of your choosing and heat up gradually on medium, watching, and whisking while it starts to caramelize. 
  5. When it reaches a dark color and is pliable and sticky it’s ready to pour over the popcorn in a glass or metal bowl, mix quickly with a metal spoon as the caramel will harden.
  6. Sprinkle over salt and decorate the caramel pots once you’re ready to serve. 
  7. Store the rest of the popcorn in an airtight bag, be aware that they will soften over time. 
  8. Add extra caramel to the pots before serving and enjoy**

Notes

  • Storebought vegan caramle can be used for this recipe.
  • Brown dates can be used for this recipe, just soak them in boiling water for 20 minutes to ensure they are soft before blending.
