Salted caramel granola

Ingredients 

  • 2 cups rolled oats
  • 1 cup shredded coconut
  • 1/4 cup flax seeds
  • 1/2 cup roasted red skin peanuts
  • 1/2 cup chopped dates
  • 1/3 cup vegan caramel 
  • 1/4 cup almond butter
  • 1 tsp vanilla extract
  • Fresh strawberries
  • 1/3 tsp salt

Method

  1. Preheat oven to 175 degrees Celcius.
  2. Gradually heat up the salted caramel, add in the nut butter and the vanilla extract, and mix well.
  3. In a seperate bowl, add in the rolled oats, coconut, flax seeds, roasted peanuts, and dates.
  4. Pour the caramel mixture over the dry mixture and mix well, add in the salt and scoop the granola on to a parchment paper-lined tray.
  5. Bake for 15-18 minutes, take the granola out halfway, and scoop over to prevent them from burning.
  6. Remove to cool once baked and store in an airtight container for up to two weeks.

Notes:

  • The salted caramel can be replaced with store-bought vegan caramel.
  • the almond butter can be subbed with peanut butter, hazelnut or cashew butter.
  • Other add in’s can be used instead of peanuts and dates like dried cranberries, mulberries, roasted almonds, and hazelnuts.
