Rye raisin cinnamon loaf

Ingredients 

  • 1 1/2 cup strong bread flour
  • 1 1/2 cup rye flour
  • 1 1/2 cup luke warm water
  • 2/3 cup raisins
  • 1 1/2 tsp cinnamon
  • 2 tsp instant yeast
  • 3 tbsp coconut sugar
  • 2 tsp cinnamon
  • 1 tsp salt

Method

  1. Mix the flours, salt, raisins, cinnamon, and salt. 
  2. Then add the sugar, yeast, and raisins to the warm water. 
  3. Let it bubble for 5-10 minutes and then gradually add this to the flour mixture until the dough comes together. 
  4. Here you can make use of your hands of a dough hook attachment and knead for 5 -10 minutes. 
  5. Place in an oiled bowl, and cover with a damp cloth overnight or for 30-60 minutes until doubled in size. 
  6. Preheat oven to 200 degrees Celcius and place the bread on parchment paper in a cast iron pot, sprinkle over some flour and make a few patterns with a sharp knife if you like. 
  7. Once the oven has preheated, cover the pot with the lid, place the bread in the oven and let it bake for 20-25 minutes, remove the lid for the last 10 minutes until golden brown. 
  8. Let the bread cool before slicing, serve with some vegan butter and jam.
