Rustic tomato galette

Tomato cashew cheese galette

Ingredients 

  • 1 Cup all-purpose flour
  • 1 1/2 cup spelt or whole wheat flour
  • 1 tsp salt
  • 1 tsp coconut sugar
  • 1 Cup cubed vegan butter or coconut oil
  • 1/4 cup mixed seeds like linseeds, sunflower and sesame seeds

Filling

  • 3-4 plum tomatoes of choice
  • 1 cup soaked cashews
  • 1/4 cup pesto
  • 1-2 tbsp nutritional yeast
  • 1 tbsp lemon juice
  • salt and pepper

Method

  1. Sift together the flour, salt and coconut sugar. Rub in the butter or the coconut oil with your hands and use a bit of ice cold water to bring the pie dough together.
  2. Add in the seeds and knead well until the dough is a firm yet springy ball, wrap in cling wrap and place in the fridge for one hour.
  3. While the dough is resting make the cashew cream cheese base.
  4. Place all the ingredients in a highspeed blender and blend until smooth, place in a glass container in the fridge for up to one week.
  5. Preheat the oven to 175 degrees Celcius.
  6. Remove the pie dough, roll out on a floured surface into a round shape, then scoop out a few tablespoons of the cashew cream cheese on to the pie base, leaving about 5 cm open and untouched.
  7. Slice and decorate the galette with the tomatoes and fold over the edges, brush the edges with coconut oil, sea salt and sesame seeds.
  8. Bake for 20-25 minutes until golden brown and jammy.
