I added this to the donuts and it just worked so well.

I feel so weird because school has started and now I have all this time on my hands. There is only so much cooking I can do before our fridge start flowing over. Or that leaves me wanting to eat all day long, and that is even more of a problem. I guess I’ll have to find something else to occupy my time, it’s like I forgot how to be anything but a mom. Can anyone relate?

There is nothing to complain about right? There is so much to be thankful for. I came home after the creche dropoff and there was a batch of figs on my front door. My fridge is literally stacked with all the figs and donuts. Clear, that I am such a sweet tooth. There are always some kind of treat hidden somewhere.

That’s why I love figs so much, they are these sweet jewels. I think figs are my ultimate favorite fruit. EVER. So I froze the whole lot for smoothies later on, because figs in smoothies are AMAZING. These donuts can be frozen too if you’re looking for something sweet. You can whip one out and top it with whatever you like, this glaze can be made super quick or you can make the glaze with almond butter and maple syrup like these banana bread donuts.

The pro’s to autumn is all the figgy’s. They go well with savory and sweet dishes. Like these donuts, they are pretty versatile either way. What’s your preference, sweet or savory?

Rooibos rosewater donuts

Rooibos rosewater donuts

Ingredients 

  • 1/2 cup oat flour (oats blended in to flour)
  • 1/2 cup quinoa or any other flour you like to use
  • 3/4 cup almond milk
  • 1 tbsp apple cider vinegar
  • 1/3 cup coconut sugar or brown sugar
  • 1 tbsp rosewater
  • 2 tbsp rooibos syrup
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Rooibos glaze

  • 1/2 cup coconut sugar (blitz in a blender until its castor sugar)
  • 1-2 tbsp rooibos syrup
  • pinch of salt

Rooibos syrup

  • 2 cups water
  • 4 rooibos tea bags
  • 3/4 cup agave or rice syrup or regular white sugar

Method

  1. Mix together all the dry ingredients like the flours, sugar, baking powder and salt.
  2. Then mix together the almond milk, apple cider, baking soda, vanilla essence, rosewater essence, and rooibos syrup.
  3. Mix the dry into the wet ingredients and then set aside to thicken for ten minutes.
  4. Scoop the donut mixture into a ziplock bag and snip off the end and pipe the required amount for every donut into your donut tin or baker.
  5. Mix together the glaze and then let the donuts cool to room temperature and then dip the donuts or drizzle the donuts with the glaze.
  6. For the rooibos syrup: Place all the ingredients in a saucepan and then let it simmer until it thickens, cool and then store in a Maison jar in a cool dry area.

Rooibos glaze 

  1. Mix all the glaze ingredients and drizzle or dip the donuts in the glaze.
  2. Sprinkle over some extra coconut sugar.
