Rooibos blueberry waffles are the perfect brunch treat or even Mothersday alternative. Since it’s French mothers day tomorrow (and husband has some chance to redeem himself lol), these waffles are the perfect treat for someone special. Or even if you’re not celebrating something special, and need a batch of pretty good waffles, then these will fix you right up. They are plant-based, tasty and so fruity!

Rooibos tea is simply one of my favorites treats, I drink it on the daily and in SA our rooibos tea is legit strong and so soothing. I love to drink it just before I go to bed (perfect hot toddy) and I love to add it to sweet desserts. There are so many health benefits in rooibos tea and there are numerous products that have been made with it. When we travel back to FR I can’ help but sneak some home brewed rooibos tea bag into my suitcase. I just can’t go without!

Rooibos blueberry waffles

Rooibos blueberry waffles

Ingredients 

  • 1 3/4 cup spelt or wholewheat flour
  • 3/4 cup plant-based milk
  • 1/2 cup strong brewed rooibos tea
  • 3 tbsp melted coconut oil
  • 2 tbsp apple cider vinegar
  • 1 tsp vanilla essence
  • 2 tbsp coconut sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp cinnamon
  • 1/2 cup fresh blueberries

Rooibos syrup

  • 2 rooibos tea bags
  • 1 1/2 cup water
  • 1 1/2 cup coconut sugar
  • Fresh or frozen blueberries

Method

  1. Preheat your oven to 175 degrees Celcius or preheat your waffle maker.
  2. Place all the ingredients for the rooibos syrup and let it simmer for 30-45 minutes until thicken.
  3. Mix together the dry ingredients and then set aside while your mixing the wet ingredients together.
  4. Mix the wet into the dry and then fold in the blueberries, set aside to thicken until the batter has thicken and your oven or waffle maker is warm.
  5. Bake or make the waffles, roll the blueberries in sugar and add extra rooibos syrup on top of the waffles.
  6. Add whipped coconut cream on top and cooled rooibos syrup for extra oemf!
