Roasted strawberry cheesecake jars

Ingredients 

  • two cups washed and diced strawberries
  • 1/4 cup agave or maple syrup
  • 1 cup soaked cashews (soak at least for two hours)
  • 1/2 cup coconut milk or cream
  • 1 tbsp lemon juice
  • 1 tsp vanilla essence
  • pinch of salt

Salted caramel crumble

  • 1/2 cup rolled oats
  • 1/2 cup almond flour
  • 1/2 cup chopped cashews
  • 1/3 cup coconut oil
  • 1/3 cup maple syrup or agave
  • 1/3 tsp salt

Method

  1. Preheat the oven to 175 degrees Celcius. 
  2. Place the sliced strawberries on a parchment-lined baking tray, drizzle with the agave or maple syrup. 
  3. Bake for 10 minutes until jammy and remove to cool. 
  4. Mix the crumble ingredients together and place on a parchment paper-lined baking tray and bake alongside the strawberries and remove to cool before layering. 
  5. Blend the cheesecake ingredients in a high-speed blender until smooth and place in the fridge to cool. 
  6. Layer these three layers as you like and serve cool with mint leaves. 

Notes:

  • Other fruits can be used like cherries, pears, and apples. 
  • Plant-based yogurt can be subbed with the cashew cheesecake layer for a lighter alternative
  • Almond flour can be subbed with shredded coconut 
  • To eat these as a breakfast option, add more rolled oats to the equation
