Roasted carrot butternut soup is one of my favorite soups ever. I know I’ve said it before because everything that I make is my favorite…So I am a bit misleading. I love butternut soup and have made a few kids in the past, curry butternut soup, butternut chickpea soup and butternut chili soup. I have to say that the combo of carrot and butternut absolutely taste amazing. The carrot adds that tinge of sweetness that is so unexpected. I promise you, this is so easy and tasty you’ll want to make it over and over again!

I’ve picked up these locally grown carrots from the farmers market. The uglier they are the better the taste. These are as bio as you can get and I am not complaining since my carrots that I’ve planted last spring was a no show! So I’ll support all the local farmers around because I know how hard it can be. (not that I have really tried) So the farmers market is a weekly thing where I buy flowers and other goodies for lunch. It’s an outing for me in Castres, that and the local coffee spot is like a second home to me. It might sound sad, but I’ve come accustomed to the slow life here, especially since it rained here all winter long. I have learned to be happy just with what I’ve been given. It’s all about just being thankful because having more doesn’t ensure happiness after all.

This soup will make you super thankful for good food and the ability to be able to cook it yourself. Oh, and before I forget, this soup was pretty tasty with these chickpea waffles that I made some while back. I just grabbed one out of the fridge and defrosted it and served it with the soup. Comfort food is not in short supply in my household. If you’re a soup and waffle lover then give this one a try*

Roasted carrot butternut soup

Ingredients 

  • 1 medium-sized butternut
  • 2 cups chopped carrots
  • 1 medium-sized red onion
  • 1/4 cup leek
  • 2-3 garlic cloves
  • 1 tbsp za’atar spice (find the recipe here)
  • 1/4 cup olive oil
  • 1/2 cup coconut milk or cream
  • 3 cups veggie stock
  • Salt and pepper

Method

  1. Slice up the butternut with skin on, and then add on to a parchment paper-lined a baking tray with the red onion, carrot, leek and slightly crushed garlic cloves.
  2. Drizzle over the olive oil, zaatar spice, salt and pepper and then bake for 20-25 minutes.
  3. Let it cool slightly before adding it to a pot on the stove along with the veggie stock and coconut milk.
  4. Let it simmer on medium for about 15-20 minutes, remove from the heat and then blitz it up till smooth. This soup is quite thick so you can add more vegetable stock to thin it out.
  5. Serve with waffle dippers, soya roasted seeds, and fresh herbs.
