Matcha lime tarts are the perfect pretty treat for Valentine’s day or any other day to show the ones you love that you mean it. These pretty tarts are gluten-free, not too sweet and have a bit of tang that works just so well with the matcha. Not only are these tarts healthy and super easy to make but they are topped with the superfood tea powder for an added zing.

Raw Matcha lime tarts

Raw Matcha lime tarts

Ingredients 

Base

  • 1/2 cup almond flour
  • 1/2 cup coconut flour
  • 1/4 tsp salt
  • 1/4 cup melted coconut oil
  • 1/4 cup maple syrup
  • 1/2 tsp vanilla essence

Filling

  • 1/2 cup soaked cashews
  • 1/2 cup coconut cream
  • 1/4 cup melted coconut cream or melted coconut butter
  • 1/4 cup maple syrup
  • juice of half a lime
  • 1 tsp vanilla essence
  • Pinch of salt

Toppings

  • Matcha powder
  • Fresh strawberries
  • Lime slices

Method

  1. Mix the base ingredients and cut out the mold shapes with parchment paper lining the tart basses before pressing in a couple of tbsp of the base for each tartlet. 
  2. Use the back of a spoon, dip it into ice-cold water to ensure it doesn’t stick to the spoon and place in the freezer for at least 20 minutes to set. 
  3. Blend the filling ingredients until smooth and pour on to the set bases, place back in the freezer to set for about two hours. 
  4. Remove from the bases, remove the parchment paper and decorate with sprinkled matcha powder, lime slices, and fresh strawberries. 

Notes:

  • Be sure to use tart bases with a loose base for easy removal.
  • You can sub the lime juice with lemon, add blueberries and beet powder instead of strawberries for a summer twist.
