Raw Cashew Caramel Slices

Raw Cashew Caramel Slices are one of the best Raw, vegan, gluten-free, sugar-free, trans-fat-free…you name it – the “it” snack that I have made so far and believe you me, that I have made quite a fair share of healthy snacks these last couple of years.

I have a bit of an obsession with Cashews… it just makes any dish, whether savory or sweet so delicious. This healthy alternative to snacking can lead you to over snacking and the best way is to pair it with a healthy alternative like dates. Date caramel to be exact!

When you’re into having a sweet thing every now and again, then this recipe is so sufficient because it will satisfy that sweet tooth without adding on the over indulgence of eating a whole bar of chocolate. One square will be suffice, that is for sure! My husband is even eating these stuff and he is quite difficult to be persuaded when it comes to the sweet stuff he prefers! There isn’t a lot that can come close to ice-cream. So with a pat on the back, I can vouch that you won’t be the only one devouring these caramel slices…

Ingredients 

For the base:

  • 1/2 cup of shredded coconut (pre-roast if you like a more nutty taste)
  • 1/2 cup of grounded roasted almonds or just plain almond flour
  • 1/4 cup of Agave/Maple syrup
  • Pinch of salt
  • 1/2 tsp vanilla essence
  • 1-2 tbs Coconut oil

For the Caramel filling:

  • 3/4 cup dates or prunes
  • 2 tbsp nut butter
  • 1/4 cup of water if needed
  • Pinch of salt
  • 2 tbs coconut oil

For the Chocolate Ganache:

  • 1/3 cup coconut oil
  • 2 tbs of cocoa powder
  • 1/4 cup of agave or maple syrup
  • 1 tsp vanilla extract
  • 1/3 cup of nut butter
  • 1/2 cup of chopped salted cashews
  • 1/4 cup of cocoa nibs

Method

  1. Start off by making the dough first: add all these ingredients to a food processor or a blender and blend until the dough becomes crumbly.
  2. Remove and press flat into a parchment paper lined tray and set in the fridge. (You can bake the base for a few minutes till brown also)
  3. Then start off by making the caramel:  place all these ingredients into a food processor or a blender, blend until smooth and add more water if necessary.
  4. Scoop out the caramel onto the base and place in the fridge to set.
  5. For the chocolate: Meanwhile start off by melting the coconut oil and nut butter together, add the cocoa powder salt and sweetener of choice and mix well.
  6. Remove the Caramel, sprinkle over the chopped salted cashews and then pour over the chocolate.
  7. Even the chocolate out and then sprinkle over the cocoa nibs and extra cashews if you want, place back in the fridge until set, slice and enjoy!
