I totally love tomatoes and I have made a few versions of a tomato tart, but this version is very french inspired. Ratatouille is a typical french dish that is found as a side to various dishes.

Ratatouille tart

Ingredients 

  • 1 Cup all-purpose flour
  • 1 1/2 cup spelt or whole wheat flour
  • 1 tsp salt
  • 1 tsp coconut sugar
  • 1/2 -3/4 cup olive oil
  • a few tbsp cold water
  • 2-3 fresh plum tomatoes
  • 1 1/2 cup red onion
  • 1 medium-sized eggplant
  • 1 can chopped onion and tomato puree
  • 1 tbs sugar
  • 1 crushed garlic clove
  • 1 tsp dried oregano
  • Fresh basil
  •  Salt and pepper

Method

  1. For the olive oil tart base, start by mixing the dry ingredients together and then add the olive oil and cold water until the dough comes together.
  2. Let the dough come together, roll into a ball, wrap in plastic wrap and place in the fridge for an hour.
  3. Preheat oven to 175 degrees Celcius.
  4. Roll out the tart base and then place on to the tart base very nearly, measuring out the shape of the tart base beforehand (letting the edge hang over by 2-3 cm.
  5. Smear the base with tomato sauce, slice the onion, tomato, zucchini and eggplant very thinly.
  6. Layer these layers in a round form, fold over the edges, brush with olive oil, salt and pepper and bake the tart for 30-35 minutes.
  7. Decorate with fresh basil, salt and pepper.
  8. Serve with crusty bread and a fresh salad.

Tangy tomato sauce

  1. Place all the ingredients for the sauce in a pan on the stove to a simmer, add the spices, salt and pepper to taste.
  2. Leave to cool before using.
