This weeks weather has been cray-cray, It’s been sunny like summer and windy, cold and raining like winter. Our noses and allergies have been acting up, just coz the weather has been acting up. There are many things waiting in anticipation. Summer for one, going on vacation, and a few other things I am crossing my fingers for.

You know it’s good to have hope, even in the dire of winter and rain that just keeps on coming. In so many ways, it’s where I am at right now. Starting a blog is one thing, keeping on creating and hoping for an opportunity is another and can get pretty tiring after a while. But you keep on hoping and doing it for multiple reasons is a good thing rather just for ambition. So here goes another reason and that is summer and pretty berries, fruit, the joy of celebrating memories with the ones you love.

Even though we’ll be heading back to winter (which has lots of benefits too), I am looking forward to coming back July and just enjoy summer and all it has to offer. I have found some amazing strawberries and rhubarb and has made a few wonderful things. Rather than all the baked goods I could do coz, it’s still freezing, I am anticipating summer with the ice cream cubes already!

So you better give these a try, coz they are just UBER amazing ( my new favorite word) and totally legit for these guys!

Raspberry caramel ice cream cubes

Raspberry caramel ice cream cubes

Ingredients 

  • 1 cup soaked cashews
  • 300ml soy whip of whipped coconut cream
  • 1/4 cup coconut blossom syrup/Agave or maple syrup
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Pink chocolate

  • 1/3 cup cacao butter
  • 1/4 cup coconut oil
  • 1 tbsp macadamia butter or cashew butter
  • 1/4 cup agave or coconut blossom syrup
  • 1/3 cup non-dairy creamer
  • 1 tsp beet powder
  • pinch of salt

Caramel centre

  • Vegan caramel or
  • 1/3 cup tahini
  • 1/3 cup coconut oil
  • 1/4 cup agave or coconut blossom syrup
  • 1/4 tsp salt

Method

  1. Place the soaked cashews in a food processor and blend until smooth, scoop out and fold in to the already cooled whipped coconut cream, fold in the agave or coconut blossom syrup, vanilla and salt and place back in the fridge.
  2. Once the caramel has cooled, layer these two ingredients in a silicone ice cube tray, by starting the ice cream as the base, a bit of the caramel in the middle, raspberry on top and then the last layer of ice cream on top.
  3. Smooth out, by tapping the mould on your kitchen counter.
  4. Place back to freeze completely before, press out the moulds and dipping or drizzling over the chocolate.
  5. Decorate with freeze dried strawberries, serve right away or freeze one again and removing 10 minutes before serving time.

Pink chocolate 

  1. Melt the coconut oil and then add in the cacao butter until fully melted, add in the rest of the ingredients, whisk well and then dip the chocolate on to the already frozen ice cream cubes.

 

Caramel

  1. You can actually make your very own vegan caramel, or you can just melt the tahini, coconut oil together, add the agave or other syrup of choice and then add this as the middle layer of these ice cream cubes.
