Quick crispy baked falafels are a pantry staple in my house. I am certainly all cooked out at this stage and need a new way to use those chickpeas to work for me. These falafels are a must make and they are super simple to make, perfect for a quick meal when you’re looking for something easy!

Quick Crispy baked falafels

Ingredients 

  • 2 cups dry chickpeas soaked overnight
  • 1 bunch of cilantro chopped
  • 1 small red onion
  • 1/2 tsp garlic flakes
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1 tsp paprika powder
  • 2 tbsp lemon juice
  • 1/4 cup toasted sesame seeds
  • 4-6 tbsp buckwheat flour or any other
  • salt and pepper

Hot pink beet hummus (recipe in method)

Method

  1. Remove the chickpeas and pat dry with a kitchen towel, place the chickpeas and the rest of the ingredients except the flour in a blender and blend until chunky, with bits and pieces of chickpeas still intact.
  2. Scoop out the mixture into a bowl and mix in the flour until you can form the mixture into patties.
  3. Heat a pan with olive oil and add 3-4 patties and fry until brown on each side.
  1. Preheat your oven to 175 degrees Celsius.
  1. Transefer the falafels on to a paper lined baking tray and bake the falafels for 15 minutes until crispy.
  2. Serve the falafels with baked vegetables, couscous, fresh greens, and beet hummus.
  3. Freeze the rest of the falafels in a glass container, remove to defrost when you need something easy.

Hot pink Beet hummus

  1. Blend together 260g canned chickpeas drained or canned white beans with 1 1/2 tbsp olive oil, 1 tbsp tahini, 1 tbsp lemon juice, 1 tbsp agave or maple syrup, 1/4 cup beet powder or 1 cup sliced cooked beets, 1 tbsp sriracha, salt, and pepper to taste.
