Quick baked falafels

Quickly baked falafels are super duper easy to make and sooo easy to eat as well. I have been trying out eating plant-based and it’s been nearly two weeks. I don’t eat that much meat in general and haven’t been eating dairy for up to two years. After skipping meat for these plant-based goodies, I have to say I feel pretty good! These falafels are so easy to make and are very filling, so meat is really not missed over here. I might just do this for real.

But don’t let us fool ourselves, eating plant-based is a lot of work, because for you to have an exceptional eating regime you have to plan. Some of your food you have to soak beforehand to optimize nutrition, but don’t be dismayed. There are so many foods like canned beans that make life a whole lot easier to manage when you are eating plant-based. The key is cooking in bulk and freezing some of the beans that you cooked, grabbing a bag out of the freezer that already has the nutrition you need is just so easy!

In the beginning, as I was quite hungry just because I always thought carbs were the enemy, but since I have been adding more protein-based sources to my meals and have been eating more whole grains. I have so much more energy and I genuinely feel full enough during the day. I had to overcome my fear of carbs to realize that eating this way is actually so much better for my body. Like I said, I could do this for real.

You have to try this recipe, you can fry these falafels in some olive oil in a pan to make them more crispy! Oh yes and don’t forget this yum spring curry recipe that goes along with these falafels. YUM!

Quick baked falafels

Ingredients 

  • 250g canned chickpeas
  • 1/4 cup pine nuts
  • 1 tsp of olive oil
  • 1/2 tsp garlic cloves
  • 1/2 tsp cumin
  • 1/2 tsp paprika
  • 1-2 tsp coconut cream
  • 1/3 cup garbanzo flour or cornstarch
  • 1/3 cup polenta
  • extra olive oil

Curried spring vegetables

  • 1/4 cup red onions
  • 1/4 cup red pepper
  • 1/2 cup chopped fresh asparagus
  • 1/4 cup peas
  • 1/3 cup chopped carrots
  • 3-4 medium sized broccoli florets
  • 1 cup baby spinach
  • 1/2 tsp turmeric
  • 1/2 tsp curry powder
  • 1/2 tsp ginger powder or fresh ginger
  • 1/3 cup coconut cream
  • 1/3 cup vegetable stock
  • 1/4 cup apple cider vinegar
  • 1/4 cup honey
  • 1/4 tsp chili powder
  • 1/4 cup soy sauce
  • Salt and pepper to taste

Method

  1. Preheat oven to 175 degrees Celsius.
  2. Place the drained chickpeas (canned works best) in a bowl and mash with a masher.
  3. Then add the rest of the ingredients except the polenta.
  4. Add more flour if needed and scoop out a teaspoon and half into the palm of your hands and roll into falafels.
  5. Roll in the polenta or bread crumbs or even almond flour and place on a baking tray, drizzle with olive oil and bake for 15-20 minutes.
  6. Remove and serve with vegetable curry, quinoa, and red onion chutney. (find the recipe here)

Curried spring vegetables 

  1. Sautee the onion and red pepper till translucent, add the rest of the vegetables (except the baby spinach) and let them cook for about 10 minutes till crispy and slightly soft.
  2. Add the coconut cream, vegetable stock, spices, apple cider vinegar, and honey.
  3. Add the baby spinach and simmer for another 5-7 minutes before serving.
  4. Serve with extra coconut cream and fresh cilantro.
