Pumpkin tapioca oats is simply autumn in a bowl. This delish way to dish up the old fave but a goodie is becoming a favorite of mine, especially since I get to start the day with one of my favorite produce of the season, pumpkin. Oh yes and best of all this creamy tapioca oats get served with maple candied pecans, no bad mornings I tell you!

Oh yes and best of all this creamy tapioca oats get served with maple candied pecans, no bad mornings I tell you!

This weekend was kind of a tough one in retrospect of the weather blowing us away, handling a toddler going through some kind of sleep deprivation and being home alone. This is where I’d just like to step into my mother’s house and let her fix me a sweet cup of tea, alongside some kind of cookie or dessert she has in her cupboards. (non-vegan of course). But I certainly always loved her sago pudding, and could go for a bowl any day! Traditionally made with tapioca, milk, apricot jam and a crispy baked eggwhite like meringue ontop.

But without sago pudding insight… I know we all get through seasons somehow, and I have realized the significant thereof, but it doesn’t change the fact that sometimes you need a bit of mercy or some sympathy even. That is the tricky part of living so far away from relatives that can understand the dire need of the situation. Sometimes that is what food signifies for me, it’s the comfort, care and so much more in a bowl that kind off makes everything a little better.

So at this stage, I intend to enjoy every day, I intent (with my sleep deprivation) to be the best mom, wife, and cook I can be. It’s funny though, the world doesn’t stop and the guy next to you might have an even worst day that you have ever had. So it’s good to have a little perspective and giant bowl of porridge easing your aches. I mean this bowl, could fix my mood in an instant. I’m pretty sure it could do the same for you!

Pumpkin tapioca oats

Ingredients 

  • 1 cup rolled oats or quick oats
  • 1/2 cup uncooked tapioca
  • 2 1/2 cups water
  • 1 tsp salt
  • 1/2 cup roasted cinnamon pumpkin or pumpkin puree
  • Candied pecans 
  • Chocolate hazelnut butter or almond butter
  • Nutmilk
  • extra maple syrup for drizziling
  • Cinnamon

Method

  1. Start by making the candied pecans.
  2. Then bring the oats, tapioca, water, and salt to a boil on medium heat.
  3. Once the tapioca turns translucent, it’s time to add the pumpkin.
  4. Let it cook for another 5-8 minutes before serving with the candied pecans, chocolate hazelnut spread, nut milk, maple syrup, and cinnamon.

Notes:

  • oats can be subbed with other grains like: buckwheat, quinoa, millet ect.
