Pomegranate lime fizz is the perfect way to celebrate the new year or new season that we are about to head into. I love the tang of this mocktail/cocktail, and I wish I was celebrating a couple of these with my friends and family, but once again I’ll probably be asleep before 12. This is the season of our lives right now, and honestly, I’m okay with that!

2020 for me is all about doing things in quality rather than quantity. I have to do things when I can and plan spectacularly and that I guess is the art of cooking/food blogging and being a mom. But we do what we love yet because it brings a fulfilling in some way right and that is what blogging has been for me these past years and that is not something that is going to change pretty soon. Whatever your New year’s resolutions are, I hope it brings you joy, that’s my motto this coming year.

Pomegranate lime fizz

Pomegranate lime fizz

Ingredients 

  • 1 1/2 cup pomegranate jewels
  • 1/2 cup agave or maple syrup
  • 1/4 cup rose water syrup
  • pinch of salt
  • slices of lime
  • Pomegranate jewels
  • edible flowers
  • sparkling water or lemonaide
  • Gin or vodka

Method

  1. Place the pomegranate jewels, agave rose water syrup and pinch of salt in a saucepan, bring to a simmer on medium for 15-20 minutes until the jewels deflate and the syrup becomes gooey. 
  2. Strain, let it cool and store in a glass container for up to three weeks. 
  3. Cool the cocktail glasses and the lemonade, crush some ice for the cocktails. 
  4. Add 1-2 tbsp pomegranate syrup per cocktail, add the lime slices and the sparkling water. 
  5. Add one or two shots of the clear alcohol or you can skip the alcohol altogether if you choose. 
  6. Serve with fresh edible flowers and crushed ice.
