Pecan pie crêpes need no explanation. With fall all around, comfort food is needed. These are so easy to make and they’ll be ready in no time for Sunday brunch. Fluffy pancakes plus candied pecans, and a creamy cheesecake filling. Yes, please. Need I say more, keeping it sweet and simple with this post today.  I am making most of the weekend!

Ingredients

  • 1 cup quinoa flour
  • 1 tbsp cornstarch
  • 1 tbsp coconut oil
  • 1 1/2 tbsp maple syrup
  • 3/4 cup almond milk
  • 1 tbsp apple cider vinegar
  • 1 tbsp vanilla essence
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • Pinch of salt
or as a alternative use peanut butter/cashew butter and coconut cream whisk together until fluffy.
 

Pecan praline

  • 1/2 cup pecans
  • 1/2 cup coconut sugar
  • Cinnamon
  • Pinch of salt

Method

  1. Mix together all the dry ingredients and set aside.
  2. Mix together the milk, melted coconut oil, apple cider, and vanilla essence, mix into the wet and let it sit for 5 minutes or so before frying in coconut oil.
  3. You’ll need about 2-3 tbsp batter per crepe.
  4. Place the crêpes in the microwave to keep warm, already folded if possible.
  5. For the pecan praline, heat up a pan on medium heat and then add the coconut sugar and a splash of water.
  6. Add the pecans and mix well.
  7. Remove the crêpes and smear on the cheesecake filling and top on the pecan praline.

Notes:

  • For the cheesecake filling, make it the night before for it to properly set in the fridge.
  • You can sub the cheesecake filling with peanut butter/cashew butter and coconut cream whisk together until fluffy.
  • You can replace the quinoa flour with all-purpose white flour or any other gluten-free flour like spelt or gluten free oats.
  • To make decent pecan praline, blitz up the pecans (best in a food processor) to make a paste and smear this with the cheesecake filling in the crêpes.
