Pecan crumb muffins are a combination of summer, autumn and winter all rolled into one. The different textures and tastes are somewhat comforting, yet light and crunchy at the same time. You’d want to eat more than one that’s for sure. By the sight of my living room floor, my son purely enjoyed the muffins too. After I gave one to my 18-month-old, I too was eating more than one, because eating muffins beat’s cleaning floor’s. Crumblike anythings to a toddler is life, not so much for me when all the cleaning is involved.

They say you relax after having a baby, you don’t clean as much or stress as much when the house is dirty. Somedays I literally have to walk behind him sweeping away, you’d think I’ll be used to this by now, but these are a point and that point is crumbs on the already cleaned floor. He is surely testing the boundaries by now, seeing what you’ll do if he throws food on the floor. I tend to surrender every now and again because it’s just too exhausting and it ain’t going to change anytime soon. Maybe baby number two will let me relax, what do you think?

Him: I’ll just step on this cookie for interest sake and see what it does. The curiosity is never-ending. I cannot contain crumbs any longer, therefore, these cupcakes are just a must make in your kitchen. My son adored them because they taste like banana (he never like banana until recently) and the crunch of the pecan nut topping is the best part and can even be eaten from the floor, just ask my little munchkin. I’ll opt for delicious eating over fussy cleaning.

Apart from him eating everything in sight, he is just repeating mostly everything we say lately and it is just so cute and utterly amazing. We are the only ones speaking Afrikaans to him, he hears french from school and English from our friends. Lately, he has been spending much more time with us because it has been school holiday for quite some time. I am excited to see when he goes back to school what types of words he will be saying. He started right before the vacation with a few French words like “la” which means there and coocoo and voila. The fact that he is starting to speak a little french just makes my heart want to burst.

We are starting to sing lullaby’s to him before bed and he tries to repeat all the words but obviously, he can’t say much just yet. So so adorable. I just want to cherish these memories, they might be my favorite just yet. I say that every time, so I guess everything is my favorite.

These muffins though. They look super sophisticated with the crunchy crust on top, but any plain old jane can bake them in one batch and send them as a gift to someone who needs a gigantic crunchy muffin. Is there anything better than a freshly baked muffin with a generous amount of butter on it? Except for a super cute toddler?

Pecan crumb muffins

Banana Pecan crumb muffins

Ingredients 

  • 3/4 cup spelt flour or oat flour
  • 1/4 cup almond flour
  • 1/4 maple syrup pr agave
  • 1 mashed banana
  • 1/4 cup peanut butter
  • 1/3 cup almond milk
  • 1 tbsp apple cider vinegar
  • 1 tsp vanilla essence
  • 2 flax eggs (2 tbsp flax meal in 1/3 cup water)
  • 1/2 tsp cinnamon
  • 1/4 tsp salt

Streusel topping

  • 2/3 cup chopped pecans
  • 1/2 cup oats/shredded coconut and almond meal blended together
  • 1/4 cup melted coconut oil
  • 1 tbsp maple syrup or agave
  • pinch of salt
  • 1/2 tsp vanilla essence

Method

  1. Preheat oven to 175 degrees Celcius.
  2. Mix other the dry ingredients and set aside.
  3. Add the apple cider to the almond milk, then the vanilla essence, and the flax eggs.
  4. Set to thicken and then add this to the dry ingredients, with the peanut butter, agave, and mashed banana.
  5. Add the cinnamon and the salt and then pour into paper muffin cups, then spoon the streusel topping on top, and bake the muffins for 15-20 minutes till golden.
  6. Leave to cool and then store in an airtight container for up to two days or in the fridge for up to four days.

Pecan crumb layer

  1. Mix together all the ingredients and then add about 1 1/2 tbsp on to each muffin.
