Peanut butter pancakes, is there anything better? I could inhale these every single morning and whats’s even better is that they get topped with extra peanut butter and banana, my absolute fave! I can not let go of my love of peanut butter, I am so fortunate to be able to make a batch whenever I feel like it and I love to add a different twist to it like adding vanilla and cinnamon.

I have to have peanut butter or some kind of nut butter each day, my day is not complete without it! It’s like skipping coffee or not having breakfast. I’ll be craving it all day. I made a batch of pancakes to take with to the hospital. I am prepping my meals for post-labor since time will be limited to cook once baby nr2 is here.

AND I want to be prepared for in the hospital where I know the meals won’t be great and certainly not vegan. So these pancakes, overnight oats, peanut butter on rice cakes, yogurt and granola will be my breakfast options for a while. I’d rather be over-prepared than starving with a newborn in the hospital, thank you very much!

These pancakes are tasty, light, chewy and uber yummy with bites of banana, chocolate and peanut butter in there. They might be more healthy sans the chocolate but who is counting when it comes to pancakes, am I right? I also made a batch of maize meal pancakes, that are equally delish and I’ll be sharing the recipe really soon.

Peanut butter pancakes

Peanut butter pancakes

Ingredients 

  • 1 cup spelt or whole wheat flour
  • 1 small banana mashed
  • 1/4 cup peanut butter
  • 1/4 cup almond milk
  • 1 tbsp apple cider vinegar
  • 2 tsp baking powder
  • 1/4 tsp salt
  • Splash of vanilla essence
  • 1/4 cup chopped vegan or 90% dark chocolate chips

Method

  1. Mix the flour, baking powder and salt together.
  2. Mash the banana and add the milk, apple cider vinegar, soft peanut butter and the vanilla extract.
  3. Add the wet into the dry, fold in the chocolate chips and heat up a pancake pan or a regular pan with 1/2 tsp coconut oil.
  4. Scoop 2-3 tbsp of the batter for each pancake and fry 2-3 minutes on each side until brown.
  5. Serve the pancakes with sliced banana, extra chocolate, peanut butter, maple syrup and chopped pecans.

Notes:

  • The spelt or whole wheat flour can be replaced by blending rolled oats into flour.
  • You can fold in blueberries into the batter instead of chocolate chips or even coconut flakes or toasted hazelnuts.
