Peanut butter Horlicks cookies

I used Peanut butter and Horlicks combined into one bite-size healthy snack alternative to fuel you during those all so demanding days. Horlicks is probably one of my most favorite drinks to drink during the winter season. It is very hard to find a good malty drink in a country where espresso is king. We came upon a packet of Horlicks and just by drinking it was not enough for me. I wanted to eat it but eating it sounds less satisfying. So why not make cookies and the best way to make cookies delicious is by adding my all-time favorite partner in crime, Peanut butter.

Any ready to drink malty drink will do, even hot chocolate is something to try out. Unfortunately, Horlicks is no longer available in SA, so you can switch this recipe up with whatever other hot drink you have in your cupboard.

Cookie Ingredients

  • 1/2 cup peanut butter
  • 1/2 cup shredded coconut
  • 1/3 cup Horlicks
  • 1 tbsp chai seeds

Date caramel

  • 1/2 cup dates
  • 2 tbsp water
  • 1/4 cup cocoa powder

Method: Peanutbutter Horlicks cookies 

  1. Mix all these ingredients together and roll into cookie shapes and press flat. (makes 6)

Method: Date caramel

  1. Microwave the dates for 1 1/2 min till soft, mash and add the cocoa, mix well till combined.
  2. Scoop out the mixture with a teaspoon onto the palms of your hands and roll into a small cookie, press flat and then decorate with cashew and cocoa nibs.
  3. Place in the fridge or eat immediately. Delish!!
