OH SO SWEET Vegan meringues have seriously surprised me. What do these vegan (dairy & Animal free) meringues entail- chickpea brine? First of all, I thought these would taste pretty weird because of the whole using chickpea brine and all, but I have to say they taste pretty good. Almost like regular meringues to be honest and the bonus adding of rose water extract just added that extra bit of flair that every meringue needs.

JUST A THOUGHT: Not only am I stopping at meringues for spring, but I am cooking up all things these days, because thank you creche that I have more time on my hands, even if it is just a few hours. I feel so energized because I have gotten my creative fix. The one thing that is so much on my mind these days is- STYLE. How to do things your way, being authentic in a world where everyone is trying to find their place. Before you know it someone is doing something you wanted to or doing things your way and getting more feedback than you are. For all the creative people out there, whatever your profession is. I want to know how do you stay authentic and motivated to keep on going. I have really struggled to find out what fits with what I like and how does that fit in with who I am at this stage of my life.

Anyway- “Healthier” options are in short supply, especially here in the south of France. Mostly everything is loaded with heaps of sugar and fat. These meringues are made with sugar, but they are so sweet that you don’t need as much to satisfy your sweet tooth. Especially when they are paired with lusciously healthy strawberry ice cream. This just screams spring and it can not come soon enough. I am literally counting down the days where I am not cooped up inside with my ever so busy one-year-old boy.

What I miss the most about home or spring, in general, is just fewer layers of clothes, fresh food, fresh FRUIT and ice lollies! I know summer has it’s downside but it’s just so much more forgiving for mothers who have very busy kids- so that’s is like 90% of us out there. These meringues are great with smoothies for extra crunch, easy as a sweet snack for the kiddo’s and go down well with a cup of tea late afternoon.

Rose water Vegan Meringues

Vegan meringues

Ingredients 

  • 400g can just the chickpea brine
  • 125g cups powder sugar
  • 1/2 tsp creme of tartar
  • 1 tsp pink food coloring
  • 1/2 tsp vanilla extract
  • A few drops of rose water extract (optional)

Easy Strawberry ice cream 

  • 2 frozen bananas
  • 1 1/2 cup frozen strawberries
  • 1/2 cup soaked cashews
  • 1/2 cup coconut cream
  • 1/2 tsp vanilla
  • Pinch of salt

Method

  1. Preheat the oven to 110 degrees Celcius.
  2. Start by whisking up the cooled chickpea brine on medium until soft peaks start to form.
  3. Gradually add the powdered sugar and whisk even more until stiff peaks start to form, add the rest of the ingredients and then whisk a bit further.
  4. Place into a piping bag and start by piping them on a parchment paper lined baking tray.
  5. Bake for two hours and leave to cool into oven (without opening) for another hour or so.
  6. Stack these up with the ice cream and sprinkles.
  7. Leave the meringues in a cool dry area for up to one month.

Easy strawberry ice cream

  1. Blend all these ingredients together and then pour into a parchment paper lined bread tin.
  2. Place in the fridge to set, remember to mix with a spoon every 30-60 minutes.
  3. Remove to soften 30 minutes or so before serving.
  4. You can blend all these goodies right away with fewer fluids to make ice cream bowls with meringues shards on top.
