MushroomSpinach waffles are just YUM. We recently purchased a Tefal snack collection toaster that can do the works like yum toastees and Waffles. I can’t wait to buy the donut plates so I can bake some donuts already! My son’s first birthday and I am already undecisive between a waffle or donut bar? Choices, choices…I have forgotten how much I love the crunchy bite of a fresh waffle. Now I made these with chickpea flour that needs no eggs to get them combined. I just love Chickpea flour. It has a unique taste, but it’s seriously so good and loaded with protein.

I have slightly gotten over this winter weather already. Castres is really great, but in the winter it rains here non stop. So what do you do with an 11month old that just wants to play outside? You read the same books over and over again, play peek a boo, hide and seek, what sounds do animals make and let him carry stuff around till your house is in absolute chaos. Some days it’s pretty rough and can get a bit overbearing especially since I get cabin fever quite quickly. What saves me though is getting out and going to the gym. As you’ve read in my previous post. I have anemia and that really made the recovery after birth hard for me, but now I really feel soooo good. Thank goodness.

I asked on my Instagram what love languages you guys have? I love quality time, acts of service and gifts. My love language has changed order ever so slightly since receiving things are not as high on my priority list anymore. Now I just want to give my love as much as possible and I do that by being a mother. Even though it gets overlooked sometimes. I feel good going to bed knowing my family ate well, the house is clean and our son is growing up so fast. We just lay in bed laughing about the new thing that he has started doing today. It’s seriously the best feeling.

Chocolate smoothieNow I have to start planning this little guys 1st birthday. Wow, it has flown by! The celebrations will be more for the parents since he won’t remember a thing but I want to make it special because he’ll never be this small again. Contemplating between two themes…So you guys will just have to wait and see. Have I mentioned by the way he is such a cuddler? I thought I was a touchy person till I had a baby and a bit of postpartum depression kind of made me numb to too much PDA, but now I’m absolutely loving it. He comes and sits on our laps, gives us kisses, puls on your face and pushes books in your face so you would read to him. So freakin adorable. I’ll treasure this forever.

Now for these waffles, I wanted to try out our new Tefal snack collection machine and these ones where the best option for making the dough takes no time at all and cooking them was so quick as well. Our son is overeating bready things at the moment but I know this is such a good investment for down the road when he will want a hot crunchy waffle with stuff on top. I remember eating a big waffle with a load of syrup and ice cream on top when I was a kid. I want him to have the same memories. So I topped the waffles off with crunchy baked chickpeas, fresh cherry tomatoes, and a balsam sesame dressing. Soooo Good! Loaded with the good stuff. Eating basically anytime you want to.

Mushroom Spinach Chickpea Waffles

Chickpea waffles

Ingredients 

  • 1 cup chickpea flour
  • 1/3 cup corns starch
  • 1 tbsp olive oil
  • 1/2 cup chopped brown mushrooms
  • 1/4 cup chopped onion
  • 2 cups baby spinach
  • 1/3 cubed feta
  • 1 1/4 cup water or unsweetened almond milk
  • 1/2 tsp dried parsley
  • garlic flakes
  • salt and pepper

Roasted turmeric chickpeas

  • 1 cup chickpeas
  • 1 tbsp olive oil
  • Salt and pepper
  • 1/2 tsp turmeric powder

Balsamic dressing

  • 1/4 cup sesame oil
  • 1/4 cup balsamic vinegar
  • 1 tsp maple syrup
  • 1-2 tbsp roasted mixed seeds

Food Deco

  • 1/2 cup chopped baby tomatoes
  • Fresh rocket leaves

Method

  1. Sif together the chickpea (garbanzo) flour, cornstarch, baking powder, parsley, garlic flakes, paprika, salt and pepper and set aside.
  2. In a medium size, skillet heat up 1 tbsp olive oil and start by frying the onion and chopped mushrooms. When the onion is translucent add the washed baby spinach.
  3. Then add the water and oil to the chickpea flour and then add the feta and the mushroom mixture.
  4. Stir well and then heat up the waffle maker or pour into waffle moulds to bake in the oven.
  5. Meanwhile mix the chickpeas with some olive oil, turmeric and salt and pepper. Spread out on a parchment paper lined a baking tray and bake for 15-20 minutes till crispy.
  6. Bake the waffles for about 5-8 minutes till cooked through or 8-10 minutes in the oven.
  7. Plate on plates sprinkle over the chickpeas, slices of cherry tomatoes, fresh rocket or baby spinach and the dressing.

Balsamic dressing

  1. Mix the balsamic vinegar, maple syrup, and sesame oil together.
  2. You can roast a few seeds in a pan for extra crunch to this dish.

Super easy, super delish! What more can a mom ask for?
