Marie biscuit brownie caramels

Marie Biscuit brownie caramels are a combination of my two most favorite sweet treats. When I was younger my mother would make a batch Marie biscuit brownies also known as “skurwe jantjies” in Afrikaans. This batch was special like ever batch was because this dessert is my dad’s favorite. Therefore we had to be either super sneaky to cut off a slice and place it back in the fridge on the exact spot or ask very nicely after supper.

This batch was special like every batch that she made just because this dessert is my dad’s favorite. It would wait to taunt me as I would open up the ridge, knowing that it was not just only just for me. Therefore we had to be either super sneaky to cut off a slice and place it back in the fridge on the exact spot or ask very nicely after supper.

I never really knew how easy they were to make up until we came to France and I had to put my culinary skills to the test. You can replace Marie biscuits <with any kind of butter biscuit really, so there should be no excuse to give this recipe a try. I made it even sweeter by adding a layer of caramel on top, white chocolate, and some sprinkles. I was kind of in the mood for a brownie and millionaire square at the same time, so I just improvised.

_MG_0812-2When I do get the opportunity to make something for someone or just when the baking mood overtakes me and daddy’s home. I do tend to overdo it a bit in the sweet department and also opt for more rather than less and then gosh, I have a few more squares that I have been bargaining for.

I guess I was spoiled by having so much time on my hands. These days our little one keeps me pretty busy, so I tend not to cook or bake so much as before. The nights I am tired beyond measure and making something other than the usual dinner is not very appealing. But I have to say that this recipe is super easy and quick, it literally takes less than forty minutes to make and is ready to eat in no jiffy. be advised that they are super sweet so,  give them to the little ones sparingly…

Marie Biscuit Brownie caramels

Ingredients 

  • 1 packet of Marie Biscuits
  • 250g baking butter
  • 500g of icing sugar
  • 75ml cocoa powder
  • 1 whisked egg
  • 1 tsp vanilla essence
  • Pinch of salt

Caramel

  • 1 1/2 can of condensed milk (lait concentre)
  • 1 1/2 tbsp butter
  • Vanilla essence
  • salt flakes (optional)

Method

  1. Grease a deep square dish with butter and place in two sheets of parchment paper.
  2. Place the biscuits in a ziplock bag and crush with a rolling pin or and another hard object like a cup etc.
  3. Melt the butter in a saucepan and add the icing sugar and cocoa powder over medium heat until smooth.
  4. Remove the sauce from the heat and add the biscuits whilst stirring with a wooden spoon.
  5. Add the whisked egg, salt, and vanilla essence.
  6. Pour into the prepared dish and place in the fridge for about two hours until set.

Caramel Layer

  1. Place the condensed milk and butter in a saucepan and let it cooks over medium heat for about twenty minutes till it forms the caramel.
  2. Do remember to whisk continuously so that the caramel does not burn.
  3. Pour onto the Marie biscuit brownies and place in the fridge to set for at least two to three hours.
  4. Melt some white chocolate and smear this on top, add the sprinkles and remove from the dish to cut into squares.
  5. Place in the fridge and enjoy!
