Lentil hand pies are that kind of snack that you can have any time of the day, especially when it’s combined with this amazing tangy tomato sauce. I made a huge batch of lentil bobotie and I seriously can’t get enough. It’s so tasty and keeps me full for quite some time.

Lentil hand pies are that kind of snack that you can have any time of the day, especially when it’s combined with this amazing tangy tomato sauce. I made a huge batch of lentil bobotie and I seriously can’t get enough. It’s so tasty and keeps me full for quite some time. Like you probably have read in one of my previous posts, South Africans love all things tangy. That’s why we add chutney, apricot jam and tomato paste to basically most of our savory food.

Bobotie is a favorite for my husband and it’s really easy to prepare…(find the recipe here)  I make a big batch and then freeze the rest for those quick lunches or exhausting days that I can’t bear to make dinner. Wednesdays are usually my “night off” where we order sushi or some kind of takeout. I do prefer to make dinner and lunch most of the time, but some days I need a break. Talking about a break, this week there a two vacation days in France, so that means no creche and I am home alone this week…so when hubby gets home I’ll need a break for sure.

Like bobotie, these hand pies freeze just as well as bobotie, so they will be my go-to when I have a can’t bear to make dinner day this week. I’ll just pop a few out of the freezer for a quick lunch served with this tangy tomato sauce and a fresh salad.  So easy, quick and tangy! Everything that I might need to fuel me for my busy 15-month-old.

Lentil hand pies

Ingredients 

Pie dough

  • 1 Cup spelt flour
  • 1 cup buckwheat flour
  • 1 tsp salt
  • 125g soy butter or any butter of choice
  • 7-8 tbsp ice cold water

Bobotie lentil filling

  • 1 cup blond lentils
  • 1/2 cup cooked pumpkin
  • 1/4 cup sliced red onion
  • 1/2 tsp garlic flakes or one fresh garlic clove
  • 1 tbsp apricot jam
  • 1-2 tbsp apple cider vinegar
  • 1/2 tsp ginger powder or freshly grated ginger
  • 1/2 tsp mustard powder or mustard seeds
  • 1/2 tsp turmeric powder
  • 1 tsp curry powder (ras hagnout or borrie)
  • Salt and pepper to taste

Tangy tomato sauce

  • 1/4 cup sliced red onion
  • 200ml tomato puree
  • 2 Marinda tomatoes
  • 1 tbsp apple cider vinegar
  • 1/2 tsp mustard seeds
  • 1/2 tsp ginger powder
  • 1 garlic clove
  • 1/3 cup vegetable stock
  • Salt and pepper

Method

  1. Preheat oven to 180 degrees Celcius.
  2. Sift the flour and then add the softened butter and rub with your fingers until it resembles breadcrumbs.
  3. Add the cold water bit by bit until a dough forms and then roll the ball of dough up and wrap it up in clingwrap and place in the fridge to rest for up to an hour.
  4. For the lentil bobotie filling, start by frying up the onion till crispy and then add the rest of the ingredients and let it simmer for 15 minutes or so.
  5. Let it cool before adding in the filling.
  6. Remove the dough from the fridge and roll it out, cut out circles with a cookie cutter and then scoop about a tsp or the lentil filling in each hand pie.
  7. Smear the edges with water before you seal them, brush with coconut oil and sprinkle with poppy seeds.
  8. Bake for 15-20 minutes till brown and crispy.

Tangy tomato sauce 

  1. Fry the onion in olive oil and the add the rest of the ingredients, le it simmer for about 10-15 minutes till the onion is soft and the pies are finished baking.

Notes: These two flours can be replaced by normal self-raising flour if you prefer to used plain flour instead of gluten-free flours. Whole wheat should be used with normal flour instead of making this whole recipe with just whole wheat. Other flours to use- rice flour, quinoa flour, and corn flour.
