Winter is not officially here and I am already over stews, but flu season is surely here and I need to get those vegetables in some way. Getting all the greens is sometimes really hard, considering all the amount of veggies you have to consume. With a limited schedule (mom life) of packing in all the veggies, soup is a perfect alternative to boost the immune system of the whole family. This green soup is packed with some many green vegetables and they all taste amazing together. The men in your lives, won’t even know how nutritious this meal actually is!

I love to make a batch of soup every week and I love to try different vegetables together. My current favorite this season is definitely pea soup. I love pea soup so much, not only is it packed with protein but its super filling and an all in one lunch. A warm pea soup served with crunchy bread is super delish, especially when its extra toasted and generously dipped.

Soup makes me think of my childhood (like all comfort food), just because during winter in our super cold house a warming bowl of soup is always ready and waiting. It was the best cozy lunch ever. So recreating the perfect soup was essential for me. I always thought it is so difficult to make a delicious soup, just because you’ll need so many ingredients to make it taste good, but with minimal ingredients and minimal fat, this soup or any soup can be tasty.

Immune boosting green soup

Ingredients 

  • 1 cup frozen spinach (or four cups washed baby spinach)
  • 1 medium-sized zucchini chopped
  • 3/4 cup dry split peas or 1 1/2 cup frozen peas
  • 1/2 cup yellow lentils
  • 2 cups vegetable stock
  • 1/2 can coconut milk (200ml-300ml)
  • 1-2 tbsp nutritional yeast
  • 1/2 tsp dried parsley
  • Salt and pepper

Method

  1. Place all the ingredients in a pot on the stove, let it cook through for 30-45 minutes and let it cool down before blending.
  2. Serve with crusty bread, extra coconut cream and toasted sesame seeds.
