Hertzoggie granola
Hertzoggie granola is a genius batch of granola I tell you. if you love all things coconutty, tangy and chewy then this batch is for YOU! I love granola, it’s probably part of my top five things I prefer to eat on the daily, just because it adds that crunch, texture and a whole lot of flavor! This SA Inspired granola came from a very much loved cookie called Hertzoggies.

Hertzoggie granola
Ingredients
- 2 cups rolled oats
- 1 cup shredded coconut
- 1/2 cup coconut flakes
- 1/2 cup almond flakes
- 2/3 cup coconut oil
- 2/3 cup apricot jam
- 1/4 cup maple syrup or agave
- 1 tbsp apple cider vinegar
- 1 tsp vanilla essence
- 1/2 tsp salt
Method
- Preheat the oven to 180 degrees Celcius.
- Place the oats, shredded coconut, coconut flakes, almond flakes, and salt in a bowl.
- Melt the coconut oil and add in the apricot jam, maple syrup or agave, apple cider vinegar, and vanilla essence.
- Pour the wet mixture into the dry and mix well, pour this mixture on to a parchment-lined baking tray, spread out well and bake for 15-18 minutes, mixing through halfway with a wooden spoon to prevent the granola from burning.
- Once baked, remove to cool and store in an airtight container for up to one week and a half.
Notes:
- Chopped dried apricots can be added to the granola once it has cooled if you’d like a bit of fruit in there.
- Whole almonds can be used instead of almond flakes.
- I like to make a small batch so it stays fresher for longer, but you can always double the recipe if you like.
