Hertzoggie granola

Hertzoggie granola

Ingredients 

  • 2 cups rolled oats
  • 1 cup shredded coconut
  • 1/2 cup coconut flakes
  • 1/2 cup almond flakes
  • 2/3 cup coconut oil
  • 2/3 cup apricot jam
  • 1/4 cup maple syrup or agave
  • 1 tbsp apple cider vinegar
  • 1 tsp vanilla essence
  • 1/2 tsp salt

Method

  1. Preheat the oven to 180 degrees Celcius.
  2. Place the oats, shredded coconut, coconut flakes, almond flakes, and salt in a bowl.
  3. Melt the coconut oil and add in the apricot jam, maple syrup or agave, apple cider vinegar, and vanilla essence. 
  4. Pour the wet mixture into the dry and mix well, pour this mixture on to a parchment-lined baking tray, spread out well and bake for 15-18 minutes, mixing through halfway with a wooden spoon to prevent the granola from burning. 
  5. Once baked, remove to cool and store in an airtight container for up to one week and a half. 

Notes: 

  • Chopped dried apricots can be added to the granola once it has cooled if you’d like a bit of fruit in there.
  • Whole almonds can be used instead of almond flakes.
  • I like to make a small batch so it stays fresher for longer, but you can always double the recipe if you like.
