When you are traveling, there is a serious need for some healthy snack alternatives out there.  You do get a few pit-stops that can fill you up until the next meal, but most of the time they are loaded with extra sugar and preservatives. These healthy-on-the-go snacks are perfect for those long hours away from home.

We’re off traveling again and this time to Italy. I tend to snack a lot, out of habit I guess. i struggle to find the most healthy alternatives out there, that is why I like to plan ahead and make some snacks to keep by hand when the hunger tends to strike. These two healthy snacks are very easy to make and also easily devoured. Get the recipe below!

Health-nut bars Ingredients

  • 5 dates
  • 1/4 flaxseeds
  • 1/2 cup cashews
  • 1/2 cup peanuts
  • 1/2 cup nut butter
  • 1/4 cup sesame seeds
  • 1/4 cup chia seeds
  • 1/2 cup mulberries or cranberries

Health nut Ginger bites Ingredients

  • 1/4 cup flaxseeds
  • 4 dates
  • 2 tsp tahini
  • 1/2 cup sesame seeds
  • 1/2 cup diced dried apricots
  • 1 tsp ginger
  • 1 cup almond meal
  • Salt

Method

  1. Place the dates in the microwave with a little water and heat up for 1 minute.
  2. Remove and mash the dates and mix with the nut butter.
  3. Place the flaxseeds in a food processor and blend till fine.
  4. Add the flax seeds and the rest of the ingredients and decorate with the mulberries.
  5. Bake for 20 @180
  6. Place in the fridge and pack in zip lock bags for travel.

Method

  1. Place the flaxseeds in a food processor and blend till fine.
  2.  Meanwhile, microwave the dates with a little bit of water for 1 min.
  3. Mash the dates and add the tahini paste and the rest of the ingredients and mix well until sticky dough forms.
  4. Roll into bite size snacks.
