The crumbly yet salty texture of these tarts is just amazing with the creamy texture of the coconut yogurt with the hint of rosewater within every bite.

I really love breakfast and try to switch it up every now and again. It is still a struggle some morning for me to feed my son. Sometimes it’s a win and some mornings it’s a lose. Just depending on his mood/teething ect. That’s mom life right? Somedays your like getting things done and other days your just finished. Enjoying the in-between is what’s it’s all about, I really should try harder just to be present.

But in between broken sleep, teething, and recipe testing. The enjoyment of life can get quite lost. That’s me anyways. I swear I just have to catch a breath somedays and remind myself that now wont last forever. I don’t want to miss a beat, because my son has grown so much already. Where has the time gone?

So these tarts where my creative high last week. How pretty they are?  Don’t get me started on that honey drizzle now… I absolutely love the colors of fall and all the produce it has to deliver. This year or basically every year I feel not ready just yet for winter. There is no denying though, the food is just amazing. Deliciously sweet pumpkins, crisp apples and hints of cinnamon. It might be my favorite season, but it lasts only a couple months. Luckily though throughout winter, we can enjoy warming winter soups and apple pie.

Ingredients 

  • 1/2 cup oats
  • 1/2 cup pretzels of choice (1 used whole wheat and spelt pretzels)
  • 1/4 cup coconut oil
  • 1/4 cup honey or agave
  • 1/2 tsp vanilla
  • pinch of salt
  • Extra oats if necessary
  • Coconut yogurt
  • 1 -2 tbsp rosewater
  • Fresh figs
  • other berries or seasonal fruit
  • honey

Method

  1. Preheat oven to 175 degrees Celcius.
  2. Bitz together the oats and pretzels in a blender or food processor until it resembles coarse breadcrumbs.
  3. Add the melted coconut oil, honey, vanilla essence and extra pinch of salt.
  4. Mix well and add more oats if the texture is too runny.
  5. Press into mini tart tins and bake them for about 10 minutes until golden.
  6. When cooled add the coconut yogurt (mix beforehand the whole batch with the rosewater), fresh fruit, and honey.

Notes:

  • You can add some pecans or hazelnuts into the base for a more nutty texture.
  • These tarts go great with caramelized pears and apples too.
  • You can serve these up like ice cream cups.
