Harissa roasted baby potatoes

Ingredients 

  • Two cups washed baby potatoes
  • 1/2 cup toasted almonds chopped
  • 1/3 cup pomegranate jewels
  • 1 tsp harissa paste or powder
  • 1 tbsp agave or maple syrup
  • 1/2 tsp garlic flakes
  • 1-2 tbsp lemon juice
  • Good quality olive oil
  • Salt and pepper
  • Fresh dill

Method

  1. Preheat oven to 175 degrees Celcius.
  2. Dress the potatoes with the harissa, garlic flakes, maple syrup, lemon juice, olive oil, salt and pepper.
  3. Place the potatoes on a parchment paper-lined baking tray and bake the potatoes for 15-18 minutes until golden.
  4. Serve with toasted almonds, pomegranate jewels and fresh dill.

Notes:

  • You can adjust the harissa paste according to your liking.
  • The almonds can be replaced by pistachios.
  • The baby potatoes can be replaced with sweet potato or potato wedges.
  • Serve with these stuffed peppers.
