Greek loaded quinoa salad

Greek loaded quinoa salad

Ingredients 

  • 2 cups cooked quinoa
  • 1 cup cooked or soaked beluga lentils
  • 1 cup canned or cooked chickpeas
  • 1/2 cup kalamata olives
  • 1 ripe avocado diced
  • 1 cup washed and diced cherry tomatoes
  • 1/3 cup toasted pine nuts

Greek dressing

  • 1/4 cup good quality olive oil
  • 1/4 cup red wine vinegar
  • 1 pressed garlic clove or 1/2 tsp garlic flakes
  • 1 tsp dijon mustard or mustard powder
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1/4 tsp salt
  • crushed black pepper

 

Method

  1. Mix the dressing ingredients and set aside in the fridge to cool.
  2. Cook the quinoa according to packet instructions (usually 1 cup with 1 1/2-2 cups of water). 
  3. Presoak the beluga lentils overnight before cooking on high for 10 minutes so they retain their shape or you can serve them just soaked and raw for optimal nutrition. 
  4. Place all of the ingredients except the avocado and the pine nuts the salad in a bowl, add the toasted pine nuts on top, sliced avocado, and drizzle with the dressing right before serving. 
  5. Garnish with fresh edible flowers, store in a glass container in the fridge for up to two days. 

Notes:

  • Beluga lentils can be replaced with any other lentils you prefer.
  • Vegan feta can be added if you have some.
  • You can even roast the chickpeas for a bit of crunch!
