Gingerbread spiced french toast is my absolute favorite way of eating bread these days. I have to confess, looking at my website recipes, I know now that I am for sure a sweet tooth and I am not ashamed to say it. All within boundaries, of course, I like to start my day the right way, the sweet way that is and this french toast is just the way to go!

The cold weather has come knocking on our door this week, and all I want to do is just curdle under the sheets with my nose poking out. Copious amounts of coffee and comfort food are the way to go this winter and in my almost consistent state of rain and winter (due to our summer holidays spend in winter SA) I have come to love all things comforting, and I love to add layers (figuratively and literally). That’s the beauty of winter. Like layers being added to my life, I love to add layers to my food as well, and pain perdu aka french toast is just the perfect balance of layers.

Gingerbread spiced french toast

Gingerbread spiced french toast

Ingredients 

  • 2-4 slices whole wheat/ gluten-free bread of choice or rye raisin cinnamon loaf
  • 1 medium banana
  • 1 tbsp flax seed powder
  • 1 1/2 tsp gingerbread spice (2 tbsp allspice, 2 tbsp cinnamon ground, 2 tbsp ginger ground, 1 tbsp cloves ground, 1 tbsp nutmeg ground, pinch of black pepper ground)
  • 1 tsp vanilla essence
  • pinch of salt
  • 1 tbsp coconut oil

Extras:

  • Banana
  • Soy yogurt
  • Fresh figs
  • Soy yogurt
  • Maple syrup
  • Edible flowers

Method

  1. Blits together the banana, flax seed powder, gingerbread spice, vanilla, and the pinch of salt.
  2. Place the bread slices in the “egg mixture” and then let them soak up all the juices for a few minutes, add the coconut oil to the frying pan and then let the bread slices cook until brown on each side, serve with the yogurt, fruit, maple syrup, and edible flowers.
