Fluffy cinnamon pancakes

Fluffy cinnamon pancakes are perfect for a quick Sunday brunch. I always make a big batch of pancakes so I can stow some in my freezer ad a breakfast option or a snack for my little munchkin. He is quite a picky eater when it comes to breakfast and refuses to eat oats, chia pudding, and even smoothies. Porridge? No way. See what I’m dealing with here?

So pancakes and french toast is mostly the answer. Everone I know loves pancakes and we have tried to make it on the regular. I never really loved pancakes so much, but since we moved to the south of France in the middle of nowhere, we drive 45 minutes for pancakes.  Seriously. Just for the pancakes. We eat as quickly as we can because our son can’t seem to sit still for one second and the place is so tiny, that we have to take turns on who is eating and who is chasing.

That is just one thing, some places are not equipped for kids. I was thinking yesterday, I rarely see couples our age with kids in a hip trendy cafe, or maybe I am the dodger over here. My husband loves fluffy pancakes and vegan pancakes are a bit harder to fluff up like buttermilk pancakes with eggs. But you can come pretty close!

I love using spelt flour as you can guess from most of the baked goods on my website, but you can make use of whole wheat flour or oat flour to change up the game. Other gluten-free flours are pretty hard to stick, so I prefer to use Spelt. Quinoa flour is also a close favorite and most of these flours can be found at a bio store. Whilst you can make your own oat flour by grinding up some oats.

So now you can enjoy your very own fluffy pancakes chez toi, no chasing (hopefully). You can have a few bites if you have kids because these pancakes can keep them pretty occupied for a while. Lots and lots of chewing involved. If you don’t have any kids just yet, then give these ones a try. They are pretty amazing!

Fluffy cinnamon pancakes

Fluffy cinnamon pancakes

Ingredients 

  • 3/4 cup Spelt flour
  • 1 tbsp cornstarch
  • 1/4 cup almond flour
  • 1/4 cup agave or maple syrup
  • 1/2 cup almond milk
  • 1 tsp vanilla essence
  • 1 tbsp apple cider vinegar
  • 1/2 tsp cinnamon
  • 1/4 tsp salt

Elderberry syrup

  • about 3/4 cup fresh elderberries
  • 1 1/2 cup water
  • 2/3 cup agave
  • splash of vanilla
  • pinch of salt

Method

  1. Mix together the dry ingredients and mix the wet ingredients in a separate bowl.
  2. Leave the wet ingredients to curdle slightly before adding this to the dry ingredients.
  3. Let the batter thicken for 5-10 minutes before frying in coconut oil.
  4. Serve with fresh raspberries and lots of maple syrup or in my case elderberry syrup.

Elderberry syrup 

  1. Place all the ingredients in a pot on the stove and let it simmer for about half an hour on medium heat until reduced and sticky.
  2. Remove to cool and strain the mixture and press through with a tablespoon.
  3. Store in a Maison jar in the fridge if you like until serving time.

What is elderberry?

It’s elderflower’s that turn in to elderberries after the flowers fall off. -Baie de sureau- They are made into syrups and jams. I only recently discovered the uses of elderberries. See what they look like here.  You can buy the elderberry syrup at bio stores and selected stores in France. I love the brand Bigallet, you get them in quite a few places. Like the gardening store or in little specialty food boutiques.
