I recently have been going through some old content. Cringe, how far I have come indeed. It has taken me some time to find my niche, or myself so to speak. How much time have I wasted, how many bridges I have burned, just because I didn’t know who I was? Have you ever experienced this? It’s frustrating. I wish I could just tell my younger self, that girl do what you gotta do, but what is life without the hard lessons hey?

These double chocolate oat cookies though have been perfect for basically everyday this week, oh and yes and it’s only Tuesday now. Oops, guess I’ll have to make another batch then! I genuinely need them in my life right now…

Double chocolate oat cookies

Double chocolate oat cookies

Ingredients 

  • 1/2 cup peanut butter or mixed seed butter
  • 1/3 cup maple syrup
  • 1/3 cup coconut oil
  • 1/2 tsp vanilla extract
  • 1/2 tsp salt
  • 1/2 chocolate bar melted (about 1/3 cup)
  • 1/2 cup quick oats
  • 1/2 cup rolled oats
  • 1/4 cup almond flour
  • 1/2 tsp baking soda
  • Rest of the chocolate bar chopped (About 1/3 cup)

Method

  1. Preheat oven to 175 degrees Celsius.
  2. Heat up the peanut butter; coconut oil, maple syrup and chocolate together.
  3. Mix this into the dry ingredients except for the chopped chocolate.
  4. Scoop out 1 1/2 tbsp for each cookie and press flat on a parchment paper lined baking tray.
  5. Press the extra chocolate on top and then bake the cookies for 15 minutes till nice and crispy.
  6. You will be able to make 5-6 giant chocolate cookies.

Recipe adapted from Oh She Glows giant chocolate chip cookies. Her book is one of the very first cookbooks I bought four years ago.  I still love her recipes, they are easy to make and trustworthy!
