Date caramel almond butter domes are the perfect easy plant-based dessert for your festive table this year. It looks super impressive and tastes truly delish. I guess I love a white Christmas more than a sunny Christmas, I think it’s the fact that it is cozier and you can have so many excuses to drink lots and lots of hot chocolate.

I guess I love a white Christmas more than a sunny Christmas, I think it’s the fact that it is cozier and you can have so many excuses to drink lots and lots of hot chocolate.

 

We went to the Christmas markets the other night and it was packed. There where lot’s of lights, fresh waffles, crepes and soft baked pretzels (which my son thoroughly enjoyed). He loves pretzels and he has been on a binging frenzy for the last week after eating almost nothing for two weeks. So he ate the biggest pretzel all by himself and ran around between the Christmas stalls, taking to the dear stands on the ground. I swear, when I spend time with him, just me and him. Then and there I realize all the wonder a child sees and all I am missing out on!

And boy, do I miss a lot. I have become so accustomed to living life fast, creating content that I miss LIFE you know. I swear last year my new year’s resolution was eating more delish food and creating better content, but this year I just want to slow down and enjoy the now, with my family, eating delish baked pretzels. I am all for dreaming and all, but there is a line you know and I want more of life.

 

Eat enjoy and be merry with the ones I love the most! That is Christmas for me, that is how life should be.

So celebrating life, love, and family this festive season, whatever your new year’s wishes may be for the year to come, I hope you end this season off well. Starting with these domes, they are a pretty good place to start!

Ingredients

  • 200ml coconut cream
  • 1/2 cup almond or peanut butter
  • 1/3 cup maple syrup or coconut sugar
  • 1 tsp vanilla essence
  • 1/4 tsp salt

 

Date almond butter caramel

  • 6 medjool dates
  • 1/2 cup almond butter
  • pinch of salt

For the base: Blackberry rose water panna cotta

 

Toasted sesame Chocolate

  • Store bought vegan chocolate or
  • 1/3 cup coconut oil
  • 1/3 cup maple syrup
  • 1/4 cup cocoa powder
  • 1/4 cup toasted sesame seeds
  • Pinch of salt

Method

  1. Start by making the base of the domes so they are cool and ready once the domes have set.
  2. For the date caramel: soak the dates for at least 30 minutes before blending with the almond butter and the salt until smooth, place in a glass jar container in the fridge for up to three weeks.
  3. Then for the Almond butter mouse, start by whipping up the chilled coconut cream until stiff, then add the almond butter or peanut butter, maple syrup and pinch of salt.
  4. To make the domes, use a silicone mold to ensure easy removal of the domes.
  5. Start by scooping in about two tbsp of the almond butter mouse and them smearing them out towards the ends, leaving a bit of space for the date caramel in the center.
  6. Scoop about one heaped tsp date caramel in each dome.
  7. Fill up with the almond butter mouse, perfecting the top with a butter knife, place in the fridge to freeze and set for about and hour and a half.
  8. Remove from the fridge and let them sit for a few minutes to flip out of the mold and then placing on the base.
  9. Melt the chocolate ingredients, mix well and then pour on to the dome and sprinkle over some extra sesame seeds on top.
  10. Serve them right away or semi-defrosted for easy eating, extra melted chocolate is always a good idea!

Notes:

  • The base can be made with other nuts like pecans or cashews.
  • These domes are best when they are semi-defrosted so they won’t be as tough to bite in to.
  • You can replace the chocolate with vegan caramel for a more glossy glaze.
