Coffee glazed donuts
Ingredients
- 2 cups whole spelt flour (can be subbed with whole wheat)
- 1/4 cup almond flour
- 2 ripe bananas
- 2 tbsp baking powder
- 1 1/4 cup soy milk
- 2 tbsp melted coconut oil
- 1 tsp vanilla extract
- 1/4 tsp salt
Glaze
- 1/3 cup cashew butter
- 1/4 cup maple syrup
- 2 tbsp melted coconut oil
- 1 tsp freeze dried coffee diluted with a bit of hot water
- pinch of salt
Method
- Preheat the donut maker according to the donut maker instructions.
- Place all of the donut ingredients in a high-speed blender and blend until smooth.
- Bake the donuts until brown, let them cool before dipping in the glaze.
- Mix the glaze until smooth and dip the donuts and serve!
Notes:
- You can sub the cashew butter with almond butter
- The spelt flour can be subbed with whole-wheat or gluten-free versions like buckwheat, quinoa or millet.
