Coffee glazed donuts

Coffee glazed donuts 

Ingredients 

  • 2 cups whole spelt flour (can be subbed with whole wheat)
  • 1/4 cup almond flour
  • 2 ripe bananas
  • 2 tbsp baking powder
  • 1 1/4 cup soy milk
  • 2 tbsp melted coconut oil
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Glaze

  • 1/3 cup cashew butter
  • 1/4 cup maple syrup
  • 2 tbsp melted coconut oil
  • 1 tsp freeze dried coffee diluted with a bit of hot water
  • pinch of salt

Method

  1. Preheat the donut maker according to the donut maker instructions.
  2. Place all of the donut ingredients in a high-speed blender and blend until smooth.
  3. Bake the donuts until brown, let them cool before dipping in the glaze.
  4. Mix the glaze until smooth and dip the donuts and serve!

Notes:

  • You can sub the cashew butter with almond butter
  • The spelt flour can be subbed with whole-wheat or gluten-free versions like buckwheat, quinoa or millet.
