Coffee banana crumb cake

Ingredients 

  • 2 1/2 cups spelt flour or any other gluten-free flour
  • 1/2 cup shredded coconut
  • 1/3 cup coconut sugar
  • 1/4 tsp salt
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp vanilla essence
  • 3 very ripe bananas
  • 1/4 cup coconut oil
  • 1/4 cup maple syrup
  • 1 tbsp apple cider vinegar
  • 3/4 cup soy milk or any other nut milk you prefer
  • 1 espresso shot
  • 3 tbsp cacao powder

Crumb layer

  • 3/4 cup oats
  • 1/4 cup shredded coconut or almond flour
  • 1-2 tbsp spelt flour
  • 1-2 tbsp cacao powder
  • 1/4 cup coconut oil
  • 1/4 cup almond butter or hazelnut butter
  • 1/4 cup coconut sugar
  • 1/4 tsp salt

Method

  1. Preheat oven to 175 degrees Celcius. 
  2. Mash the bananas and add the nut milk, apple cider vinegar, coconut oil, maple syrup, and vanilla essence. 
  3. Mix the flours, shredded coconut, baking powder, baking soda, salt, and coconut sugar. 
  4. Mix the wet into the dry and then pour into a pre smeared or pre-sprayed bread tin. 
  5. Mix the espresso shot and the cacao powder and then pour this on to the cake, making swirls. 
  6. Mix all the streusel ingredients and pour on to the cake, and bake for 25-30 minutes until brown. 
  7. Leave to cool before slicing.
