Coconut crusted banana french toast

Ingredients 

  • 2 medium-sized bananas
  • 1/2 cup aquafaba (chickpea brine) or plant-based milk
  • 1/2 tsp cinnamon
  • pinch of salt
  • 6-8 slices of white bread or any other soft bread you prefer
  • 1 cup shredded coconut
  • 1 tbsp coconut oil
  • 400ml can cooled coconut cream
  • Maple syrup
  • Slivered almonds

Method

  1. Blend the bananas with the aquafaba or plant-milk, cinnamon, and salt. 
  2. Dip the bread slices until both sides are covered and then dip in the shredded coconut. 
  3. Place each slice on the heated pan with a dollop of the coconut oil and fry until crispy on both sides. 
  4. Serve hot with cold coconut cream, maple syrup, and slivered almonds. 

Whipped coconut cream

  1. Pour the coconut cream into a cooled bowl.
  2. Beat slowly until the cream thickens and soft peaks begin to form.
  3. Scoop into a piping bag with a star nozzle and make a big dollop on each french toast before serving.
