Cinnamon banana oat pancakes are so ridiculously easy and so deliciously good. I don’t know anyone who doesn’t love pancakes and since we’ve been in lockdown I’ve started to love them even more. I mean, every morning was brunch for us and pancakes were on rotation. No complaints at all when we made a batch of these!

Cinnamon banana oat pancakes

Cinnamon banana oat pancakes

Ingredients 

  • 1 1/2 cups quick oats
  • 2 tbsp baking powder
  • 1 tbsp corn starch
  • 1 1/2 medium ripe banana
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1 1/4 cup plant milk
  • 1/4tsp salt

Extras

  • Banana
  • Cinnamon sugar
  • Maple syrup or agave

Method

  1. Heat up your pan that you’re going to use to fry the pancakes in, add 1/2 tsp of coconut oil.
  2. Place the oats, banana, baking powder, corn starch, vanilla, cinnamon, plant milk, and salt in a blender and blend until smooth.
  3. Scoop out 2-3 tbsp for each pancake and fry until brown on both sides, takes about 2-3 minutes.
  4. Serve the pancakes with sliced banana, cinnamon sugar, and maple syrup.

Notes:

  • Other add in’s to these pancakes could be nut butter, roasted hazelnuts, blueberries, chocolate chips.
  • Gluten-free flour like buckwheat, quinoa or millet can be used as well.
  • Shredded coconut can be added into the batter for a bit of texture.
