I just love cauliflower because it gives so much oomf to a plant-based meal, and particularly baked to crispy perfection like these beauties right here.

What’s even more amazing about this recipe is the fact that you can have a delish meal, that tastes like takeout but is actually really good for you. It’s filled with plant-based protein, healthy fats and if you’d like to go the extra mile, serve these bowl with cooked quinoa or brown rice. Now Chutney is a condiment we cannot go without and order bottles by the dozen from our favorite online South African store. But you could make your own if you like…I have made it with plums, apricots, peaches and tomato. There are really so many ways to make chutney and I for one cannot eat a main meal without a bit of chutney tang in there somewhere.

Date night cauliflower popcorn bowls

Date night cauliflower popcorn bowls

Ingredients 

  • one small head of cauliflower (around two cups small florets)
  • 1/2 cup cooked chickpeas
  • 1 tbsp chutney spice mix (I bought this at the local Budget soap shop in Bloemfontein, you can replace this spice with five spice mix or Asian spice if your choice)
  • 1/2 tsp dried parsley
  • 1/2 tsp garlic flakes
  • Salt and pepper

Sauce

  • 1/2 cup coconut cream or coconut milk
  • 1/4 cup chutney 
  • 1 tbsp sesame or peanut oil
  • 1 tbsp soy sauce
  • Salt and pepper

Crumbs mix

  • 1/2 cup coconut flour
  • 1/2 cup almond flour
  • 1/2 tsp garlic flakes
  • 1/4 tsp chili flakes
  • Salt and pepper

Extra’s

  • Sushi rice or basmati rice for serving
  • Steamed edamame beans or peas
  • Chopped fresh chili
  • Chopped fresh spring onion
  • Salted peanuts
  • Toasted sesame seeds
  • Chopped fresh cilantro
  • Sliced Lime

Method

  1. Preheat the oven to 175 degrees Celcius. 
  2. Wash and dry the cauliflower florets and mix this with the cooked chickpeas, place in a bowl add the spices, salt, and pepper. 
  3. Mix the sauce ingredients well, and pour some of the sauce on to the cauliflower mixture, saving the rest for serving. 
  4. Premix the crumbs, toss well and then sprinkle over the cauliflower until all of the florets and chickpeas are covered. 
  5. Scoop out on to a parchment paper-lined baking tray and bake for 15-20 minutes until golden brown. 
  6. Leave to cool slightly before dishing up with the cooked rice, steamed edamame and the rest of the toppings. 
  7. Don’t forget to add some extra of the sauce for serving, a squeeze of lime, and some chopped chili for a extra kick, it’s a must!
