Chocolate tahini cranberry brownies are delectably sweet and perfect for an afternoon treat. Goey, chocolaty and tangy sounds about right, right up my ally that is! What is it about chocolate, coffee and stranger things that have me hooked? They all resemble a little bit of me time when baba has gone down for his afternoon nap. I won’t ramble on about these yummies because you’ll just have to make them for yourselves to try. I don’t know what it is, this weather, the rain or what that makes me crave chocolate so much lately. It has been this bad since my son has been born and he is almost a year. One more month to go- that’s crazy!!

Do you have any plans for this new year? 2017 has been a hectic year for me just in the whole sense of becoming a mother. I had no sympathy for myself and I guess that that is something I have to work on this year. Perfection is not something that can be in your vocab once you’ve become a mother, or am I wrong here? To have grace with yourself is not a given it takes practice. I really struggled with postpartum depression and I recently found out that my iron anemia had a big contribution. I constantly felt tired even though I ate healthily, exercised and had naps.

So recently I had my iron level checked out and it turns out that I still have anemia after the birth of our son. Now eleven months after I feel great and it feels as though I really enjoy him so much. It’s a little sad for me that it took me so long to get to this point. Maybe I would’ve felt tired, depro ect. even though I was taking iron supplements due to lack of sleep, but I’m kind of feeling damn why not sooner you know? Fatigue really just made things so much harder to handle and I didn’t feel like myself for a very long time, but I really feel that 2018 will be better in every sense.

Now let me be honest, getting rid of the pooch had kept me from eating everything in sight. I had to drag myself out of bed to go for a run or to the gym, now I am thankful for my no quit attitude and I am enjoying every bite. I even felt more hungry after breastfeeding due to hormones (they should get the rep for this one), but you know life is sometimes too short and you need to eat some chocolate cake already. I am a huge breakfast lover and I do love meatless Mondays, Thursdays, and Sundays…Vegetable curry, falafel, vegan buddha bowls you name it is on the menu. Okay But let’s talk dessert.

Serves

4-6 people

Chocolate Tahini cranberry brownies

Ingredients 

  • 1 mashed banana
  • 2/3 cup quinoa or oat flour
  • 1/3 cup shredded coconut
  • 1 tbsp chai seeds
  • 1/3 cup cocoa powder
  • 2 ml salt
  • 1/4 cup tahini or any other nut butter
  • 1/3 cup coconut milk or cream
  • 1/3 cup agave
  • 2/3 cup vegan or dark chocolate
  • 3/4 cup fresh cranberries
  • Extra coconut milk

Chocolate ganache

  • 1/3 cup vegan chocolate
  • 1/3 cup coconut milk or cream

Method

  1. Mash the banana and add the dry ingredients and mix well.
  2. Add the wet ingredients to this mixture and then mix well, add the cranberries (dry cranberries can be used as well) to the base of the cake pan and then pour into a parchment paper lined mini cake tray.
  3. Chopp up the chocolate and press half of the mixture into the cake.
  4. Bake for 15 minutes at 175 degrees Celsius.
  5. Let the cake cool and then make the ganache for on top.

Chocolate ganache

  1. Heat up the coconut cream and then add this to the chocolate.
  2. Mix well and then smear this on top of the chocolate brownie.

Now for the weekend to begin with a slice of brownie, cuppa coffee and my little 11-month-old giving kisses, twirling and bringing me his book to read. The small joys in life…
