Chocolate marble banana bread is just another love declaration to my all time favorite baked bread ever. I have made so many variations and every time that one is my favorite, but I have to say banana and chocolate go so well together. And most people would say chocolate goes well with most deserty things, but banana is the perfect dance partner!  This bread is especially yum because within every bite you get a melty bit of chocolate, who can say no to that?

I have been indulging quite a bit this past week, just because we have been celebrating my son’s second birthday and my husbands upcoming 30th. This month of Feb has been incredibly generous, just because we get the chance to celebrate love in so many ways. We’ve arrived back less than a week from SA and it has taken some time to find my feet again. Thanks to the amazing weather we have been having, it hasn’t been too hectic. I am easing myself back into the kitchen (kidding, I’ve been baking birthday cakes non-stop), but I like to think that. In SA I rested up quite a bit, there wasn’t a lot of baking, cleaning or washing done which gave me a tad bit of extra mental rest I needed. It’s amazing what a change of scenery or routine can do for one.

But I am very happy to be back and back in my kitchen, things aren’t as simple as they used to be sans kiddo’s at my parents house. I just wonder what did I do whilst I was living there? My son got bored and he just turned two a few days ago. I guess that’s what’s imagination is for!! So the perfect treat would be cake, but we’ve had quite a few of that so I thought I’d write down one of my favorite recipes for you.

Today is banana bread day, so this chocolate marble banana bread is quite fitting! There is not a lot that comes close to a freshly baked banana bread with a crunchy crust and light airy inside. This one is a keeper, once you make this vegan banana bread, I doubt that you’d revert back! The melty chocolate pieces are especially tasty…

Ingredients

  • 2 cups spelt flour or whole wheat flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/3 cup cocoa powder
  • 1/2 tsp salt
  • 3 very ripe bananas mashed
  • 1/3 cup agave or maple syrup
  • 1/2 cup soy milk
  • 1 tbsp apple cider vinegar
  • 1/4 cup coconut oil
  • 2 heaped tbsp tahini
  • 1 tsp vanilla essence
  • 1/3 cup chopped vegan chocolate

Method

  1. Preheat oven to 180 degrees Celsius.
  2. Sift together the flour, baking soda, baking powder and salt and set aside.
  3. Then mash the bananas and add the maple syrup, coconut oil, tahini, and vanilla essence.
  4. Add the apple cider to the soy milk and let it sit to curdle for 5-10 minutes, add this into the rest of the wet ingredients, mix well and pour into the flour mixture.
  5. Fold in the chocolate chips and divide the dough, add the cocoa powder to the one part of the dough and mix well.
  6. Layer these two layers and you desire in a pre-smeared or pre-sprayed bread tin.
  7. Bake for 35-40 minutes until the bread has risen and is cooked through. Test with a baking pin to make sure before removing to cool.
  8. Leave the bread to cool before slicing and store in aluminum foil or in a plastic container to retain the moisture.
