This week the weather has been typical for our region, one day sunny and pouring the next. This doesn’t help our stuffy noses or knowing what to wear, that is. That’s autumn for you! The best thing is a sunny, later afternoon Autumn day, but what’s the best of the best is a rainy day, with a decent stash of chocolate cookies, with just the right amount of spice!

We love ginger cookies in our house, as I kid I used to hate the stuff, just since in SA we love our ginger cookies overly gingerly. If there is even such a thing, so spicy that it burns into your nostrils, and that folks are why kids stray away when it’s tea time, but in fact, these cookies won’t do the trick at all. They are like a magnet, attracting all the spicy cookie and chocolate chewy cookie lovers.

Keeping in mind that…I cannot believe Christmas is just a couple of months away. We already bought our noël pajamas just to be ahead of the crowd and seems as though I’m one of the front runners for festive treats. These cookies fit the bill 100%/ They are everything decadent, but secretly healthy and so perfect in my book. Sorry, I’m just super exited to share this recipe with you!

Chocolate ginger crinkle cookies

Gingerbread chocolate crinkle cookies

Ingredients 

  • 3/4 cup chickpea flour
  • 3/4 cup oat flour
  • 3/4 tsp baking powder
  • 1/2 tsp baking soda
  • 3/4 tsp salt
  • 1 tsp ginger
  • 2 tbsp raw cacoa powder
  • 2 1/2 tbsp coconut oil
  • 3/4 cup coconut sugar
  • 1 tbsp maple syrup
  • 1 flax egg (1 tbsp flax powder mixed with 1/4 cup water)
  • 1 tsp vanilla extract
  • Some milk if needed
  • Cinnamon sugar to sprinkle ontop

Method

  1. Preheat oven to 175 degrees Celcius. 
  2. Mix the flours, baking powder, baking soda, salt, ginger powder, and raw cacao powder. 
  3. In a separate bowl cream together the sugar, coconut oil, maple syrup, flax egg, and vanilla. 
  4. Mix the wet into the dry until the cookie batter comes together, let the batter sit for a while, add some milk if needed if too dry. 
  5. Scoop out 1 tbsp for each cookie, roll in the palms of your hands and place on a parchment-lined a baking tray, and press flat with a fork and add some cinnamon sugar on top. 
  6. Bake for 12-15 minutes until brown on top. 

Notes:

  • You can sub the oat flour with other versions like whole wheat.
  • You can add chocolate chips for some extra sweetness.
