Chili lime coconut crusted tofu

Ingredients 

  • 200g firm tofu
  • 1 medium ripe plantain
  • 1/2 cup shredded coconut
  • 1/2 cup coconut flour
  • 1 cup chickpea flour
  • 1 1/2 tbsp nutritional yeast
  • 1 cup water
  • 1/2 tsp garlic flakes
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • Sambal oelek
  • 1 1/2 tbsp agave syrup
  • juice of a fresh lime
  • lime slices
  • fresh herbs

Method

  1. Preheat the oven to 175 degrees Celcius.
  2. Cube the tofu and slice the plantains.
  3. For the coconut crust mix together the coconut shreds, coconut flour, 1/2 tsp smoked paprika, salt, and pepper.
  4. Place the tofu in a bowl, add in the agave syrup, lime juice, garlic flakes, other half of the smoked paprika, salt, and pepper to taste and let the tofu marinate for 15-20 minutes.
  5. For the batter whisk together the chickpea flour and the water, add in salt and pepper to taste and the nutritional yeast and whisk well, add a bit more water if needed.
  6. Dip the marinated tofu in the batter and then in the dry coconut mixture until covered.
  7. Place the tofu and plantain slices on a parchment paper-lined tray and brush with coconut oil, add some salt on to the plantains, and a squeeze of lime juice.
  8. Bake the tofu and the plantains for 15-20 minutes until crispy, serve with extra lime slices and fresh herbs.

Notes:

  • The tofu can be subbed with cubed sweet potato, zucchini, or even cauliflower cubes.
  • The coconut flour or shredded coconut can be subbed with almond flour.
  • The sambal oelek can be subbed with any other chili sauce you like.
