Chickpea carrot butternut tajine is the perfect comforting meal this winter. I love this fragrant dish, it just adds that something extra when you want to make something extortionary. It’s super tasty, made with wholesome ingredients to soothe the soul, especially lately since I am missing home quite a bit and the winter blues have been rolling around in the quinte little town.

It’s super tasty, made with wholesome ingredients to soothe the soul, especially lately since I am missing home quite a bit and the winter blues have been rolling around in the quinte little town.

I have been trying to share the main meals I have been cooking lately, even though I am eating for two at this stage, there are no complaints on my side. Savory dishes are a bit daunting for me, I love to create them, eat them and store them, but to photograph them is a whole other story. By the time dinner is done, the sun has set and everyone is ready at the dinner table. “One for the blog,” I think once again.

Luckily, lately, I am making extra’s to start storing for when the baby comes, so I can capture the leftovers to share with you. I don’t know what it is but for us, we South Africans love spice, especially curry and this tajine is just right up there. Serve with tangy chutney, fluffy rice, naan bread, and whipped yogurt and your right there in our flavor station.

Tagine originates from Morocco, but in Sa we love spicy food and that comes from all of the different cultural influences in our vibrant country. So that is why I love this recipe so much, it just adds onto my list of dishes I love for winter. What’s even more amazing is the add on’s like the salted chopped almonds, pomegranate jewels, and chopped mint. Extra’s like whipped yogurt of shredded coconut can be added as well. I add and add because who doesn’t love toppings?

Chickpea carrot butternut tajine

Ingredients 

  • 1 1/2 cups cubed butternut
  • 1 cup chopped carrot
  • 1 cup canned chickpeas
  • 1/2 red onion
  • 1-2 crushed garlic clove or garlic flakes
  • 1x 400g can of chopped tomatoes
  • 1-2 tbsp sultana raisins
  • 1/4 cup chopped dried tomatoes or sundried tomatoes
  • 1 tbsp maple syrup
  • 1 cup vegetable stock
  • 1 1/2 tsp tajine spice or use the spice mix instructions below
  • salt and pepper to taste
  • Brown rice for serving
  • Salted almonds for serving
  • pomegranate jewels for serving
  • mint leaves

Tajine spice mix

  • 2 tsp ground cinnamon
  • 2 tsp ground corainder
  • 1 tsp cumin
  • 1 tsp ground ginger
  • 1/2 tsp ground nutmeg
  • 1/4 tsp chili flakes or cayenne pepper
  • 1/2 tsp crushed cardamon
  • 2 bay leaves (remove before serving)

 

Method

  1. Fry the onion in a couple of tbsp of olive oil and then add the spices, vegetables and sauteé a bit further. 
  2. Once the vegetables are fragrant, add the canned chopped tomatoes, vegetable stock, dried tomatoes, and raisins. 
  3. Let it simmer a bit further until the butternut and the carrots are soft, serve the tajine with the cooked brown rice or cous cous, naan bread, chopped salted almonds, pomegranate jewels, and chopped mint leaves.
