Lately, I am looking for easy vegan meals that can be made in a jiffy, plus a little more budget-friendly than usual since we’re expecting a little babe and we are kind of in-between jobs one of these days. Life is an unexpected thing isn’t it, just when you think you have it all figured out, there comes another curveball. BUT such is life and all its wonder keeps us on our toes.

This delish bowl of pasta is all that, loaded with flavor, which is what you’re looking for in a plant-based main option. You want something hearty at a long day, not another bowl of plain old veg, am I right? I was thinking cauliflower because lentils are an easy option too, but the cauliflower just adds that meaty texture alongside the nutty taste of the walnuts, it’s glorious comfort food!

Now the cauli can be replaced by whatever another meat alternative like shredded zucchini, carrots, crumbled tofu or seitan but for a budget-friendly and more accessible option, I found cauliflower to be the perfect fit. Not only is it super filling to boot and with the added toppings like the fresh basil and the toasted pine nuts, it makes it a dish to be served over and over again. Don’t forget the toasted bread with fresh olives and olive oil on the side though… Just for that extra touch, not that it’s needed after all.

Cauliflower Walnut Bolognese

Cauliflower walnut Bolognese

Ingredients

  • Cooked wholewheat spaghetti
  • Olive oil
  • 1 small head of cauliflower (roughly makes 2 cups of cauliflower rice)
  • One small red onion
  • 1-2 garlic cloves or garlic flakes
  • 1/2 cup walnuts
  • 2 cups canned chopped tomatoes
  • 1 tbsp sugar or maple syrup
  • 1/3 cup tomato puree
  • 1/4 cup tomato paste
  • 1/2 cup vegetable stock
  • 1 1/2 tsp dried origanum
  • 1/2 tsp dried thyme
  • Splash of soy sauce
  • Salt and pepper to taste
  • Chili flakes for serving
  • Pine nuts for serving
  • fresh basil for serving

Method

  1. Bring some water to a boil with a pinch of salt and oil for the pasta. 
  2. Once boiling add the pasta while you make the sauce. 
  3. Chop up the cauliflower and add this and the chopped walnuts into a high-speed blender and blend until it resembles bread crumbs. 
  4. In a pan heat a couple of dollops of olive oil and sautee the onion until crispy, add the cauliflower meat and the spices, then lastly the chopped tomatoes, tomato puree, and the vegetable stock. 
  5. Let it simmer for 15-20 minutes until nice and fully flavorful, add salt and pepper to taste, drain the pasta once al dente and rinse under cold water, tossing through a little oil just before serving. 
  6. Serve the pasta with the cauliflower walnut sauce, toasted pine nuts, vegan parmesan, chili flakes, and fresh basil leaves. 
  7. Toast some bread and serve this with olives and olive oil on the side.

Notes:

  • This pasta sauce can be served with any pasta that you prefer, it even goes pretty well with crispy potatoes.
  • The walnuts can be subbed with soaked white almonds or brazil nuts.
  • A delish add on can be by adding some roasted cherry tomatoes on top just before serving.
