I make a batch of granola almost every other week, just because I love it so much and let's be honest it's so addicting. To make your own granola or muesli are so worth it, because you just know everything that's in there. With these pancakes, I served some pumpkin brittle and almond butter caramel sauce. oh la, I love this combo so much!

Maltabella Banana muffins

Maltabella banana muffins are absolutely amazing. I am going to rave about these muffins cos gosh they are close to the best muffins I have made so far. I wanted to get this recipe down pretty quick before I forgot how I made them. Maltabella is one of my favorite porridge from back home. We always pack our suitcases loaded with SA products and I am always sure to add this one stuffed in between the layers of clothing or extra food goodies I am bringing with.

Mocha Lamingtons

Mocha Lamingtons are just unforgettably perfect for tea time, after dinner sweet spot or late munchie hour goodness. I absolutely love lamingtons, because like so many small bite size dessert it makes me think of my childhood days. These beauties were devoured after church alongside koeksisters, caramel tarts and milk tart. So many South African goodies that are in fact unforgettable and attached to my childhood memories.

Prickly pear tapioca pudding

Prickly pear tapioca pudding is utterly amazing whether you decide to have it for breakfast or dessert. I actually ate this bowl of tapioca pudding with my son for breakfast and there was no complaining. It is light and subtly sweetened with juicy hints of prickly pear. I remember we ate these things so much as kids, all sliced up and cold from the fridge. My mother always said we shouldn't eat too much, but they were just too delish. Now I love to use these beauties in savory and sweet dishes.

Sweet potato waffles have never come at a better time. This weekend, I am home alone once again and the only thing that can feul me with the toddler filled days are of course waffles. Not any old waffle will do. Only sweet potato waffles can do the trick. I went to the farmers' market this morning and I had to time it pretty nicely because sprinting through has to come with a game plan. Snacks, water and a list of to buy's. All the necessities led to a pretty smooth morning and a much-needed nap time afterwards (for the both of us btw).
