Carb clever choc hazelnut granola is my preference for breakfast. This granola is my guilty pleasure. Eaten for breakfast, lunch, and dinner…I just can’t seem to attain myself when it comes to this carb clever choc loaded heaven.  When we go back to visit in SA the very first thing I want to do is go to Woolworths. It’s our equivalent of whole foods, homemade, luxury packed, what’s for dinner store. a Store like that in my Ville is the thing that I miss the most. Here premade meals are the very worst and even healthy snacking alternatives can taste like cardboard…

So obviously carb clever is a big thing in SA due to banting or to the rest of the world, it’s a close runner to the Ducan diet and paleo. In Woolworths, they have these carb clever snacks that range from crackers made with flaxseeds and sunflower seeds, dinner meals and yum granola. I have tasted the pecan cinnamon granola and the other ones that I can’t quite remember, but my utmost favorite it the cocoa nib one, that my sister thinks is the worst thing in the world. We’re not talking about what she prefers for breakfast because our tastes are worlds apart. So for all the health junkies and carb conscious lovers out there, this recipe is for you.

Carbclever choc hazelnut granola

chocolate hazelnut granola

Ingredients 

  • two cups of shredded coconut
  • 1 1/2 cup coconut flakes
  • 1/2 cup buckwheat (optional for carb clever)
  • 1 cup chopped hazelnuts
  • 1/3 cup flax seeds
  • 1/3 cup sunflower seeds
  • 1/3 cup pumpkin seeds
  • 1/4 cup sesame seeds
  • 1/2 cup hazelnut butter/spread
  • 1/3 cup coconut oil
  • 1/2 cup honey or agave
  • 1/3 cup cocoa powder
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1 tsp vanilla essence

Creamy coconut yogurt 

  • Two cans of 400ml coconut milk
  • 1-2  yogurt cultures (mine was powder so I used 1 1/2 tsp)
  • 1-2 tsp agar or gelatine
  • 1 tsp vanilla essence
  • 1/3 cup maple syrup or honey

Method

  1. Preheat oven to 175 degrees Celsius.
  2. Mix together all the dry ingredients and then set aside.
  3. Melt together the coconut oil and hazelnut butter in the microwave for 1 1/2 minutes and then add the honey and microwave for another one minute.
  4. Mix with the dry ingredients and then scoop the granola our on to a parchment paper-lined a baking tray.
  5. Bake for 20-25 minutes till nice and crispy.
  6. Store in an airtight container up to one month.

Coconut yogurt 

  1. Heat up the coconut milk till lukewarm and then add the yogurt culture.
  2. Mix the agar with two tbsp of cold water, place in the microwave for 30 seconds on high, remove and whisk into the lukewarm milk mixture.
  3. Add the maple syrup and the vanilla essence.
  4. Pour into a glass jar and place in a warm area or wrapped up next to a heater overnight.
  5. Keep in the fridge for up to one month.
