Caramel Filled Hertzoggies is the hybrid of an SA favorite cookie that normally has an apricot filling. These, these cookies are just super duper amazing! I absolutely love the normal kind of Hertzoggies, but I am sure that these are from now on my absolute favorite.

Caramel Filled Hertzoggies is the hybrid of an SA favorite cookie that normally has an apricot filling. These, these cookies are just super duper amazing! I absolutely love the normal kind of Hertzoggies, but I am sure that these are from now on my absolute favorite. So when South African traditional food comes to mind, I can’t help to think of hertzoggies. I always had this idea that they are very difficult to make due to the fact that they are so popular, but certainly, they are more effort than the average choc chip, but certainly worth it!

I just can’t believe it’s easter once again. I miss everything about home these days. White chocolate covered eggs from Pick and pay, marshmallow easter eggs-just everything I am craving lately.  Oh, and easter resembles family and that I miss most of all.

The French have their very own traditions when it comes to spring (just like everything else they do). Easter is called Pâques in France and the stores are lined with colorful displays of chocolate eggs and all things chocolate basically.

So back to these cookies…

Oh yes, and by the way, these cookies have a crumbly shortbread crust that makes them ever so more delectable. My son of 13 months had his first taste this week of these yum goodies and his face was just absolutely adorable. After his first taste could have enough. These days I just laugh at all his first tastes experiences. Imagine what it must be like tasting something for the very first time. He absolutely hates it when that taste, texture hits his mouth, but then after he realizes that this is actually super amazing.

Caramel Filled Hertzoggies

Ingredients 

  • Two cups self-raising flour
  • 150ml castor sugar
  • 1 tsp baking powder
  • 1/2 cup butter
  • 3 large egg yolks
  • 1 tbsp of cold water
  • pinch of salt

Filling

  • 150ml caramel (caramel treat/bonne maman)
  • 3 large egg whites
  • 1 cup sugar
  • 2 cups desiccated coconut
  • 1 tsp vanilla essence

Method

  1. Preheat oven to 180 degrees Celsius and grease a small cupcake tray or a patty pan baking tin.
  2. Sift the flour, castor sugar, baking powder, and salt together.
  3. Rub in the butter until it resembles breadcrumbs.
  4. Add the egg yolks and water and knead the dough until it becomes smooth.
  5. Wrap in clingwrap and then let it rest in the fridge for 20 minutes.
  6. Roll the dough out to 5mm thickness and cut out circles with a cookie cutter and line these in the baking tin.
  7. Whip up the egg whites slowly whilst adding the sugar until it reaches stiff peaks, add the vanilla, coconut and whisk up a little bit further.
  8. Dollop small tsp full of the caramel in each shell, add the coconut meringue and then bake them for 20-25 minutes till golden brown on top.
  9. Place in an airtight container for up to one week.
